Another of the classic Gujarati snack. This Rava Dhokla is an instant and delicious evening snack too along with your cup of tea. Healthy and nutritious, these can be a perfect lunch box meal. Sumptuous and filling, these spongy Dhoklas, which are steamed, can add wonders to your party menu.
- 1 cup rava (semolina)
- 1/2 cup yoghurt
- 2 tsp. lime juice
- 1 tsp. ginger-green chilies paste
- salt to taste
- pinch of turmeric powder
- 1 tsp. sugar
- 1 tsp. Eno fruit salt
- 2 tbsp. oil
- 1/2 tsp. mustard seeds
- 1 tsp. sesame seeds (til)
- pinch of asafoetida (hing)
- 2 green chilies, chopped
- few curry leaves
- 1 tbsp. fresh coconut, grated
- 1 tsp. coriander leaves, chopped
Mix together rava, yoghurt, salt, turmeric powder, lime juice, sugar and ginger-chili paste with enough water into a thick batter of pouring consistency. Leave it to ferment for an hour.
Add the Eno fruit salt and give it a gentle mix to combine well. Pour into a greased steel plate and steam for 12-15 minutes. After it cools down, cut it into desired shapes.
Heat oil in a pan and temper with mustard seeds. After it stops spluttering, add the sesame seeds, asafoetida, green chilies and curry leaves. Saute for a few seconds.
Then sprinkle little water and pour this mix on the steamed dhokas. Serve, garnished with grated coconut and coriander leaves.
