Another use of pasta other than having it in tomato or white sauce is to make a simple cold salad. Just an addition of some bell peppers and onion and tossed with some olive oil dressing makes for a light and satisfying meal.
- 1 cup pasta, boiled aldente
- 1/2 cup coloured bell pepper, sliced
- 1 onion, sliced
- salt to taste
- 2 tbsp. olive oil
- 1 tsp. lime juice
- 1/2 tsp. pepper powder
- coriander & mint leaves to garnish
In a bowl, combine the pasta, bell peppers and the onion. Add the olive oil, salt, lime juice and pepper powder and toss well. Serve, garnished with coriander and mint leaves.
