Spinach Stir Fry with Ginger

         
           Loaded with iron, vitamin and calcium, this simple spinach dish is very easy to prepare and can be had with either rice or chapattis. Fried paneer cubes can also be added to it and made a chapatti wrap with this stuffing. It is not only healthy but wholesome too. It is a superb lunch box meal.






  • 2-3 bunches spinach, chopped
  • 1 onion, chopped
  • 1 tsp. ginger, grated
  • 2 green chilies, chopped
  • salt to taste
  • 1/2 tsp. turmeric powder
  • 2 tbsp. oil
  • 1/2 tsp. kalonji (nigella seeds)
  • ginger juliennes & chilies to garnish


          Heat oil in a pan and temper with kalonji. Then add the onion, ginger & green chilies and saute till light brown.

          Now add the chopped spinach, salt to taste and turmeric powder and fry on low flame till dry. Serve, garnished with ginger juliennes and chopped green / red chilies.
