A simple spicy and yummy aloo ki sabzi (potato curry) to go with the urad dal ki kachoris. As it is well known, there are many variations to this most favoutrite curry. They can be had with chapattis or plain puris too.
- 2-3 potatoes, boiled and cubed
- 2 tsp. oil
- 1 tsp. cumin seeds
- 1/4 tsp. asafoetida (hing)
- 1 tsp. ginger, grated
- 1-2 green chilies, chopped
- salt to taste
- 1/2 tsp. turmeric powder
- 1 tsp. coriander-cumin powder
- 1 tsp. garam masala powder
- 1/2 tsp. amchur powder
- 1 tsp. red chili powder
- coriander leaves to garnish
Heat oil in a pan and temper with cumin seeds and asafoetida. After a few seconds, add the ginger and green chillies and saute for a minute on low flame.
Now add the potatoes and fry for 2-3 minutes. Add all the powdered masalas and continue to fry for a minute till the potatoes are well coated.
Add 1 1/2 cups water and simmer for 2 minutes till the gravy thickens slightly. Garnish with coriander leaves and serve hot with urad dal kachoris.
