Grilled Achari Chicken


          This is a healthy variation to any fried chicken and can be served as an appetizer, accompanied with some chutney or just a dash of lime. In this recipe, I marinated the chicken with some homemade grated mango pickle along with other basic spices. 

           Pair them with some salad or a bowl of soup for a light meal. It is a very easy recipe. So go ahead and dish out this amazing grilled chicken in your kitchen. So check the step by step pictorial recipe to prepare this gourmet delight.








  • 2 chicken leg pieces
  • salt to taste
  • 1/2 tsp. turmeric powder
  • 1 tbsp. red chili powder
  • 2 tbsp. yoghurt
  • 1-2 tbsp. bottled pickle masala 
  • 1 tsp. ginger-garlic paste
  • 1 tsp. lime juice
  • 1 tbsp. mustard oil
  • 1 tbsp. gram flour (besan)





           In a bowl, mix all the above mentioned ingredients together and marinate for 3-4 hours or preferably overnight.

          Line a baking tray with aluminum foil and arrange the marinated chicken on it. Grill for 30-35 minutes. Baste with the remaining marinade midway.


          Let it remain in the oven for 10 minutes. If you wish, you can grill on an open flame for a few seconds to get a charred look. 

          Serve, garnished with a dash of lime as an appetizer or as a light meal with soup or salad. 




                      Mix all ingredients & marinate for 3-4 hours or preferably overnight.



                  Line a baking tray with aluminum foil & arrange marinated chicken on it. 



                        Grill for 30-35 minutes. Baste with remaining marinade midway.
                        Let it remain in the oven for 10 minutes. 






                    Serve, garnished with a dash of lime as an appetizer or as a light meal.

Grilled Chicken Steak


          Grilled Chicken is an all time favourite with one and all and is perfect as an appetizer with any chutney or as a light and healthy meal, accompanied with some salad. So this is a simple and an easy grilled chicken recipe, marinated in some leftover green chutney, a bit of kasundi and few other ingredients. It is a complete wholesome meal which you can enjoy with family and friends.






           This homemade, tempting and delicious grilled chicken is not only easy to make but it is completely hassle free. This is a healthy variation to any fried chicken and is a one dish meal in itself for any weight watchers too. They are a perfect treat for any in-house party too and is a great accompaniment with cocktails and mocktails.





  • 2 chicken breast
  • 1/2 cup green chutney
  • 1 tsp. lime juice
  • 1 tbsp. kasundi (bottled mustard sauce)
  • 1 tsp. ginger-garlic paste
  • 1/2 tsp. roasted cumin powder
  • salt to taste
  • 1 tbsp. oil








           Marinate the chicken breast with all the above mentioned ingredients for a minimum of 2-3 hours or preferably overnight. 

          Line a baking tray with aluminium foil and arrange the marinated chicken over it. Grill for 30-35 minutes or till done on both sides. 

          Halfway through turn the steak and baste with the leftover marinade. Serve these grilled delicacies with some salad as accompaniment for a healthy and wholesome meal.

Peri Peri Gourmet Delight


          This is my take on a Peri Peri Gourmet delight where the star ingredient is the South African special Peri Peri Sauce that I have used in all the recipes. Here you have Peri peri grilled chicken drumstick served atop fusion style jeera rice, which has some peri peri sauce. I then served with some kadhi where I have also added peri peri sauce. So as the saying goes, you eat with your eyes, here is my simple visual presentation of the end product. 












1.  Peri Peri Grilled Chicken Drumsticks - 

  • 5-6 chicken drumsticks 
  • 1 tsp. lemon juice
  • salt to taste 
  • 1/2 tsp. turmeric powder
  • 2 tbsp. olive oil 
  • 2 tbsp. peri peri sauce
  • 1/3 cup yoghurt
  • 1 tbsp. red chili powder
  • 1 tsp. roasted cumin powder




          Make few slits on the chicken drumsticks and mix with all the mentioned ingredients. Marinate for 4-5 hours or preferably overnight. 

          Arrange the marinated chicken on a greased baking tray and grill for 30-35 minutes. Flip them midway and baste with the leftover marinade.







2.  Peri Peri Jeera Rice (Fusion Style) - 

  • 1 cup Basmati rice, soaked for 30 minutes
  • 2 tbsp. oil 
  • 1 tsp. cumin seeds
  • 1 onion, chopped
  • 1 tsp. garlic, chopped
  • 2 green chilies, slit
  • salt to taste
  • 1/2 tsp. turmeric powder
  • 4-5 tbsp. peri peri sauce
  • 1 tsp. roasted coriander powder
  • 2-3 tbsp. coriander leaves, chopped




          Cook the rice in sufficient water till done. Drain and keep aside. Heat oil in a pan and temper with cumin seeds. Saute for a few seconds. 

          Add the onion, garlic and green chilies. Stir fry till light brown. Add the peri peri sauce and all the dry spices. Mix everything well, 

          Add the rice and continue to stir fry for 2 minutes. Add the coriander leaves and give it a stir. Switch off the flame and keep aside. 







3.  Peri Peri Kadi (Fusion Style) -

  • 3 tbsp. roasted chickpea flour
  • 1/2 cup yoghurt
  • 3 cups water
  • 1 tbsp. oil
  • 1/2 tsp. cumin seeds 
  • 1/4 tsp. asafoetida
  • salt to taste
  • 2 tbsp. peri peri sauce
  • 1/2 tsp. turmeric powder
  • 1 tsp. ginger-garlic paste 
  • 1/2 tsp. red chili powder
  • 1 tsp. coriander-cumin powder





          Whisk together the chickpea flour, yoghurt, water and salt. Keep aside. Mix together ginger-garlic paste, peri peri sauce and all the dry spices along with some water. Keep aside. 

          Heat oil in a pan and temper with the cumins seeds. Saute for a few seconds and then add the asafoetida, followed by the spice paste.

          Saute for a few seconds and then add the yoghurt mix. Bring it to a boil and simmer on a low flamer till it thickens to a desired consistency. Keep stirring at intervals. When done, strain it to a smooth finish. Keep aside. 

          To serve, arrange the rice first and top it up with a grilled chicken. Pour some of the strained kadhi and you are all set to relish this yummy PERI PERI GOURMET DELIGHT.

Grilled Achari Garlic Chicken


          These quick-fix yummy Chicken Drumsticks needs no intro. Liked by one and all, they can be dished out in no time for your loved ones. They can be served as a light meal along with some fresh salads / soup or as an appetizer with green chutney. They are no doubt a gourmet's delight. 

          These homemade grilled chicken are far better than any fried chicken. In this recipe I added some bottled mango pickle and gave a garlic flavour. I also made it a little mild and have not used any colour. You many make it spicy as per your choice. So check out the step by step pictorial recipe to prepare it. 








  • 6 Chicken Drumsticks
  • salt to taste
  • 1 tbsp. mustard oil
  • 8-10 garlic cloves, ground / grated
  • 1 tsp. Kashmiri red chili powder 
  • 1-2 tbsp. pickle (I used mango pickle)
  • oil / leftover marinade for basting











           Clean the chicken drumsticks and make cuts on them. Make a paste of garlic, red chili powder, pickle, oil and salt with little water.

          Smear this paste all over the chicken drumsticks and marinate for 5-6 hours or preferably overnight in the refrigerator.

          Line a baking tray with foil and arrange the marinated chicken legs over it. Grill for 30-35 minutes by basting with oil / leftover marinade and flipping them halfway through.

           Garnish with coriander leaves and serve them hot with green chutney.




                     Marinate with all the spices for 5-6 hours / overnight in the refrigerator.



                        Line a baking tray with foil & arrange marinated chicken legs on it. 



                      Grill for 30-35 min. by basting with oil / leftover marinade & flipping
                      them halfway through.






                        Garnish with coriander leaves & serve them hot with green chutney.

  • 1 tsp. red chili powder
  • 1 tsp. lemon juice

  • 1/2 tsp. garam masala powder
  • 1/2 tsp. roasted cumin powder








          Marinate the chicken fillet with all the above mentioned ingredients for a minimum of 2-3 hours or preferably overnight. 

          Line a baking tray with aluminum foil and arrange the marinated chicken over it. Grill for 30-35 minutes or till done on both sides. 

          Halfway through turn the steak and baste with the leftover marinade. Serve these grilled delicacies with some salad as accompaniment for a healthy and wholesome meal.




                      Marinate chicken fillet with all mentioned ingredients for 2-3 hours or
                      preferably overnight. 



                      Line a baking tray with aluminum foil & arrange marinated chicken 
                      over it. 



                      Grill for 30-35 min. or till done on both sides. Halfway through turn 
                      the steak & baste with the leftover marinade. 






                               Serve with some salad as accompaniment for a healthy meal.

Grilled Podi (Gunpowder) Chicken


          Made these yummy grilled chicken with a difference. I marinated with some Andhra special spices (Nalla Karam Podi & Kura Karam Podi). You can substitute it with kashmiri red chili powder and any idli podi (gunpowder). 

           These can be served as great party appetizers and relished with some tongue tingling green chutney / garlic chutney and a drizzle of some lemon juice for that extra tang. 

           You may have these small bites as a light meal along with some salad / soup or as a wrap for your evening snack. Pack them for a lunch box meal if you wish. Options are aplenty. Choice is yours. 





  • 500 gms. boneless chicken
  • salt to taste
  • pinch of turmeric powder
  • 1 tbsp. Andhra special Kura Karam Podi (use Kashmiri red chili powder instead)
  • 1 tbsp. Andhra special Nalla karam Podi (use idli podi instead)
  • 1 tsp. garlic paste
  • 1 sprig curry leaves, chopped
  • 1 tbsp. oil
  • 1 tbsp. lime juice
  • extra podi to garnish
  • extra oil to baste while grilling 





          Marinate the chicken with all the mentioned ingredients overnight. 

          Grill on both sides for 25-30 minutes. Baste with some oil midway. 

         Transfer to a serving plate and serve with onion rings, green chilies, lemon wedges and a sprinkle of some idli podi.

Chettinad Flavoured Grilled Chicken


          This is a very healthy variation to any fried chicken and can be served as appetizers or as a light meal with soup and salad. Serve them with green chutney, onion rings and a dash of lime if having as an appetizer. As I often make these grilled delicacies, I experiment with different spices. So today the marination is that of chettinad masala.

          So what are you waiting for?. Try out this yummy grilled recipe at home and I bet your family and friends will simply love this gourmet delight. So check out the step by step pictorial recipe  to prepare it.





  • 1 small chicken, cut into desired size
  • salt to taste
  • 1/4 tsp. turmeric powder
  • 2 tbsp. chettinad masala (check the recipe below)
  • 1 tsp. red chili powder
  • 1 tsp. ginger-garlic paste
  • juice of 1/2 lime
  • 1 tbsp. oil to marinate
  • oil for basting





          Marinate the chicken pieces in all the above mentioned ingredients for 2-3 hours. Then place them on a baking tray, lined with aluminum foil.

          Place the try on the top level of a microwave oven and grill for 35 minutes by flipping it over halfway through and basting with oil or remaining marinade.

          Serve as an appetizer with onion rings, green chilies, a drizzle of some lime or green chutney. It can also be had as a light meal with soup and salad as accompaniments.







Chettinad Spice-
  • 2-3 tbsp. coriander seeds
  • 8-10 dry red chilies
  • 2-3 green cardamoms
  • 1" cinnamon
  • 5-6 cloves
  • 1 tbsp. cumin seeds
  • 2 tbsp. fresh grated coconut
  • 1 javitri
  • 1 tbsp. stone flower
  • 2 marathi moggu
  • 1 star anise
  • 1/4 tsp. fenugreek seeds
  • 1/2 tsp. pepper corns
  • 1 tbsp. fennel seeds



         Dry roast the coconut first till light brown. Then add rest of the ingredients and sauté for a minute on a low flame or till you get a nice aroma coming through. Keep aside to cool. Then grind into a fine powder and store in an airtight container.










                                Marinate chicken pieces with all ingredients for 2-3 hours. 



                               Then place them on a baking tray, lined with aluminum foil.



                    Grill for 35 min. by flipping it halfway & basting with oil or remaining
                    marinade.



                  Serve as an appetizer with onion rings, green chilies, a drizzle of some lime
                  or green chutney. It can also be had as a light meal with soup & salad as                                            accompaniments.
