Soya Chunks Kebab / Soya Nuggets Kabab

 

           These healthy Soya Chunks kababs are worth a try and they tastes absolutely yummy. They are a great party recipe perfect for special occasions. You can enjoy these kababs as an appetizer with sweet tamarind chutney or green chutney, as a tea-time snack or as a lunch box meal in the form of a wrap. It is a very easy recipe. All it needs to be done is to mix all the ingredients, make patties and shallow fry them to perfection. 



          So what are you waiting for? Go ahead and give it a try. They can also be served as a main course with naan, tandoori roti or pita bread. 

          For a healthier version it can be grilled to perfection. You may also have it as a burger complete with all the stuffing of your choice. So check out the step by step pictorial recipe to prepare this nutritious treat.



  • 1 cup soya nuggets
  • 2 tbsp. roasted gram flour
  • 2 tbsp. corn flour
  • 1 onion, chopped
  • 1 tsp. ginger, grated
  • 1 tsp. garlic, finely chopped
  • 2 green chilies, chopped
  • 2-3 tbsp. coriander leaves, chopped
  • 2-3 tbsp. mint leaves, chopped
  • salt to taste
  • 1/2 tsp. turmeric powder
  • 1/2 tsp. coriander powder
  • 1/2 tsp. cumin powder
  • 1/2 tsp. garam masala powder
  • 1 tsp. red chili powder
  • 1 tbsp. lime juice
  • oil to shallow fry




            Soak the soya chunks in hot water for 20-25 minutes. Squeeze out the water and blend into a coarse paste. 

          Transfer to a mixing bowl. Add rest of the ingredients (except oil) and combine everything well.

          Divide into equal size portions. Give a round shape or any shape of your choice.

          Heat oil in a pan and shallow fry them, few at a time, on both sides till golden in color.

          Drain on a kitchen towel and serve with any chutney, sauce or ketchup for a comforting evening snack.

               Squeeze out the water and blend to a coarse paste. 


 Transfer to a mixing bowl. Add rest of the ingredients (except oil).


                    Combine everything well.


Divide into equal size portions. Give a round shape or any shape of your choice.


Heat oil in a pan & shallow fry them, few at a time, on both sides till golden in color.



                   Drain on a kitchen towel.


Serve with any chutney, sauce or ketchup for a comforting evening snack.

Semolina Bun

 

           Semolina Bun is soft and spongy. It is shaped like a bun, hence the name. It is prepared in a tadka pan. However, it can also be prepared in a small wok pan or an appe pan. A tempering of mustard seeds, urad dal, asafoetida, onion, curry leaves and green chilies are added to the batter. It is a very quick recipe that can be dished out in a jiffy. 

   


           Do try this amazing and wholesome Bun, accompanied with coconut chutney for a comforting breakfast / meal. It is also a perfect snack or a lunch box meal. So do give this recipe a try and introduce something new to your family and loved ones.   • 1 cup semolina
  • 1/2 cup yoghurt
  • water as required
  • 1 tbsp. oil for tempering 
  • 1/2 tsp. mustard seeds
  • 1/4 tsp. asafoetida
  • 1 tsp. urad dal
  • 1 small onion, chopped
  • 1 green chili. chopped
  • 1 sprig curry leaves, chopped
  • 1-2 tbsp. coriander leaves, chopped
  • salt to taste
  • 1/2 tsp. red chili flakes
  • 1 tsp. flaxseed
  • 1 tbsp. soaked chia seeds
  • 1/4 tsp. baking soda
  • oil to fry the bun 





          Blend the semolina, yoghurt and water into a smooth batter. Transfer to a bowl. Cover and keep aside for 10-15 minutes. 

          Heat 1 tbsp. oil in a pan and temper with mustard seeds, asafoetida and urad dal. Sauté for a few seconds.

          Add the onion, green chilies and curry leaves. Sauté till light brown. Pour this tempering into the batter.

          Now add salt, red chili flakes, coriander leaves, flaxseed, soaked chia seeds and baking soda. Mix well. 

          Heat 1 tbsp. oil in a Tadka pan and pour 1-2 ladleful of the batter. Cover and cook on a low flame till one side is well browned.

          Then flip it over and cook the other side too, till done.

          Cook more buns with the remaining batter and serve this comfort food with any chutney of your choice.  



In a mixer grinder, blend the semolina, yoghurt and water into a smooth batter. Transfer to a bowl. Cover and keep aside for 10-15 minutes. 


Heat 1 tbsp. oil & temper with mustard seeds, asafoetida & urad dal. Sauté for a few seconds.


      Add onion, green chilies & curry leaves. Sauté till light brown. 


                      Pour this tempering into the batter.


      Add salt, chili flakes, coriander leaves, flaxseed, soaked chia seeds 


                         & baking soda. Mix well. 


Heat 1 tbsp. oil in a Tadka pan & pour 1-2 ladleful of the batter. Cover & cook on a low flame till one side is well browned.


                   Then flip it over & cook the other side too, till done.


                        Serve with any chutney of your choice.

Poha Vada

 

            These Poha (Beaten rice) Vada are an ideal tea-time snack. They can also be served as appetizers along with tomato ketchup or green chutney. They are very easy to make and very delicious at the same time. 

          For a healthier version I have used Brown Poha and boiled Raw Banana instead of potatoes. Finely chopped mixed veggies too were added to make them more nutritious. The addition of peanuts gives a bit of a crunch to the end product and the roasted chana dal powder, a binding to the vadas. For a vegetarian version, you can skip the egg and use a slurry of besan or simply skip both and shallow fry them. So check out the step by step pictorial recipe to prepare this party snack.


   




  • 1 cup brown poha (beaten rice)
  • 2 raw bananas, boiled, peeled & mashed
  • 1/2 cup chopped mixed veggies (beans, carrots, capsicums & green peas)
  • 2 tbsp. roasted peanuts, coarsely ground
  • 2 tbsp. roasted & powdered chana dal (Bengal gram)
  • 1 small onion, finely chopped
  • 1 tsp. ginger, grated
  • 2 green chilies, chopped
  • handful of coriander leaves, chopped
  • 1/2 tsp. roasted cumin powder
  • 1/2 tsp. chaat masala
  • salt to taste
  • 1 egg, beaten
  • oil to deep fry




          Wash the poha for a few seconds and keep aside for 10 minutes so that it becomes soft. 

           Mix the poha and all the other ingredients (except egg & oil) and knead into a dough. 
Divide this mix into equal portions. 

          
 Take each portion and shape into a round flat patty. Do the same with the rest of the mix. Refrigerate for a couple of minutes. 

          Heat oil in a pan / kadai. Dip them one by one in the egg mix and deep fry them on a medium flame, few at a time, till crisp and golden brown.

          Drain on a kitchen towel and serve with tomato ketchup / red chili sauce / green chutney as a comforting snack. 


     Mix the poha & all the other ingredients (except egg & oil) &

Malai Paneer Tikka

 

       These melt-in-the-mouth Malai Paneer Tikkas are just irresistible. They can be made at home, restaurant style, for some perfect appetizers. These delectable snacks goes well with tomato sauce or green chutney and onion rings. And not to forget with a sprinkle of chaat masala. So go ahead and try these party specials this Christmas and New Year.

        


         I tried to keep the cream and butter to the minimum. In that way one can have these Tikkas guilt free. These Tikkas can also be stuffed in parathas along with some coriander leaves and ketchup / kasundi / mint chutney and served as paneer rolls. So check out the step by step pictorial recipe to prepare this delectable treat.



  • 250 gms. Fresh Paneer cubes
  • 1 tsp. ginger-garlic paste
  • 1 tsp. green chili paste
  • salt to taste
  • 1/4 tsp. pepper powder
  • 1/2 tsp. roasted coriander-cumin powder
  • 1/4 tsp. carom seeds
  • 1 tsp. lime juice
  • 1/3 cup hung yoghurt
  • 2 tbsp. fresh cream
  • 1 tbsp. melted butter
  • 1 tbsp. roasted chickpea flour
  • oil to grease the pan / tawa
  • few cubed onion, capsicum & tomato
  • few wooden skewers, soaked in water for an hour
  • 2 pinches of chaat masala
  • green chutney / tomato sauce and onion rings to serve





         In a bowl, combine all the above mentioned ingredients starting from ginger-garlic paste to chickpea flour. 

          Marinate the paneer and the veggies with the prepared paste for an hour in the refrigerator.

          Grease the skewers with a little oil and string the paneer cubes and the veggies.

          Heat some oil in a pan and roast the skewered paneer on all sides till done. Baste with the leftover marinade halfway.

          For a Smokey effect, place the skewers on a steel wire mesh directly on the flame and fire grill them till it is slightly charred. 

          Sprinkle chaat masala and serve, garnished with onion rings and tomato sauce / green chutney.

          

      In a bowl, combine all the above mentioned ingredients starting

             Add the paneer and the veggies to the prepared paste.


            Mix everything well and marinate for an hour in the refrigerator.

                   Now they are half done.

       Sprinkle chaat masala & serve, garnished with onion rings &

       tomato sauce / green chutney.
