Raw Banana Cutlet / Tikki

 

          Check out these yummy shallow fried cutlets made of raw banana and few basic ingredients easily available in your kitchen. They come out just amazing. It is so easy and simple to make. They are perfect for an evening tea-time snack. You can also serve them as appetizers along with tomato sauce or green chutney. 

         Do try and include them in the menu of any in-house party. It can be prepared well in advance and refrigerated to be fried at the time of serving. So check out the step by step pictorial recipe to prepare this yummy party snack.





           These cutlets can also be served as vegetable burgers along with onion, lettuce, cucumber, tomato and cheese slice. 

          Besides, they can be made into a roll / frankie or packed as a lunch box meal. They also tastes great with hummus and can be wrapped in parathas / chapatis.





  • 1 raw banana, boiled, peeled & mashed
  • 1 tbsp. rice flour
  • 1 tsp. ginger, grated
  • 1-2 green chilies, chopped
  • 1 onion, finely chopped
  • 1/2 tsp. cumin seeds
  • 2 tbsp. coriander leaves, chopped
  • salt to taste
  • 1/4 tsp. turmeric powder
  • 1/2 tsp. garam masala powder
  • 1/2 tsp. amchur powder or to taste
  • 1/2 tsp. red chili flakes
  • 1 tsp. sesame seeds
  • 2-3 tbsp. oil to shallow fry







          In a bowl, mix together all the ingredients (except oil) and knead into a dough. Make equal size portions of it and give it a round flat shape.

          Heat oil in a tawa / pan and shallow fry them, few at a time, till golden in color. Drain on a tissue paper and serve them hot with tomato sauce or green chutney.

Grilled Podi (Gunpowder) Chicken


          Made these yummy grilled chicken with a difference. I marinated with some Andhra special spices (Nalla Karam Podi & Kura Karam Podi). You can substitute it with kashmiri red chili powder and any idli podi (gunpowder). 

           These can be served as great party appetizers and relished with some tongue tingling green chutney / garlic chutney and a drizzle of some lemon juice for that extra tang. 

           You may have these small bites as a light meal along with some salad / soup or as a wrap for your evening snack. Pack them for a lunch box meal if you wish. Options are aplenty. Choice is yours. 





  • 500 gms. boneless chicken
  • salt to taste
  • pinch of turmeric powder
  • 1 tbsp. Andhra special Kura Karam Podi (use Kashmiri red chili powder instead)
  • 1 tbsp. Andhra special Nalla karam Podi (use idli podi instead)
  • 1 tsp. garlic paste
  • 1 sprig curry leaves, chopped
  • 1 tbsp. oil
  • 1 tbsp. lime juice
  • extra podi to garnish
  • extra oil to baste while grilling 





          Marinate the chicken with all the mentioned ingredients overnight. 

          Grill on both sides for 25-30 minutes. Baste with some oil midway. 

         Transfer to a serving plate and serve with onion rings, green chilies, lemon wedges and a sprinkle of some idli podi.



















Muthi Kebab (Fist Shape Mutton Mince Kebabs)


          This is a great party appetizer which can be prepared in advance and refrigerated. It is made with mutton mince and other flavouring agents. Very simple  and an easy snack recipe, they are deep fried at the time of serving and relished with tomato ketchup, kasundi (mustard sauce) or green chutney. 

          





          You may also serve these yummy kebas as a light meal with salad or soup. The name Muthi comes from the fact that these kebabs are given a rugged fist shape and not any neat round / oval shape. you may also have these kebabs in tortilla / chapatti as rolls or made into a gravy to be had with rice or any Indian bread.   • 250 gms. mutton mince, completely drained
  • 2-3 tbsp. roasted chickpea flour
  • 1 tsp. ginger-garlic paste
  • 1 tsp. raw papaya paste
  • 1-2 green chilies, chopped
  • 1 tsp. lime juice
  • 2-3 tbsp. fried onions, crushed
  • 1 tsp. white sesame seeds
  • salt to taste
  • 1/4 tsp. turmeric powder
  • 1 tsp. red chili powder
  • 1 tsp. roasted coriander-cumin powder
  • 1/2 tsp. garam masala powder
  • 1/4 tsp. cardamom powder
  • 2-3 tbsp. coriander leaves, chopped
  • 2-3 tbsp. mint leaves, chopped
  • oil to deep fry








          In a large bowl, mix all the mentioned ingredients (except oil). Marinate for 2-3 hours or preferably overnight.

          Take a small portion of the mince mix in your palm and squeeze to give a fist shape, called muthi. The size of the kebab may differ. I kept mine small - a mini version. Make similar muthi kebabs and keep aside.

          Heat oil in a pan and deep fry them in batches to golden in colour. Drain on a kitchen towel.

          Serve as a party appetizer with tomato ketchup, kasundi (mustard sauce) or green chutney. You may also serve these yummy kebabs as a light meal with salad or soup.




                 Take a small portion of mince mix in your palm & squeeze to give a fist shape, 
                 called muthi. Make similar muthi kebabs & keep aside.



                           Heat oil in a pan & deep fry them in batches to golden in colour.



                                        Drain on a kitchen towel.

Rice Flour Crispies


          If you are looking for some easy and simple snacks that can be dished out in a ziffy, then here are some yummy rice flour crispies that is an instant version. These are some deep fried snacks that can be enjoyed with your evening cup of tea / coffee or as appetizers with green chutney, tomato sauce or mayo. So check out the step by step pictorial recipe to prepare it.








  • 1 & 1/2 cups rice flour
  • salt to taste
  • pinch of baking soda
  • 1 tbsp. sesame seeds 
  • 1 tsp. carom seeds (ajwain)
  • 1 tsp. red chili flakes
  • 2 tbsp. hot oil
  • oil to deep fry





          In a bowl mix all the above mentioned ingredients (except oil to deep fry). Add required quantity of water and knead into a soft dough. Keep aside for 10 minutes.

          Take a small portion out of the dough and pat it directly on a greased steel plate with your fore fingers into a thin round circle. Make straight line markings with a knife or a pizza cutter.

          Steam for 5 minutes and let it cool down before you break loose all the pieces. Heat oil in  a pan and deep fry them in batches till golden in colour. 

         Drain on a kitchen towel and serve as tea-time snacks or as appetizers with green chutney, tomato sauce or mayo. They can also be stored in airtight containers for later use.







                               In a bowl mix all the ingredients (except oil to deep fry). 



                    Add some water & knead into a soft dough. Keep aside for 10 minutes.



                    Take a small portion of the dough & pat it directly on a greased steel
                     plate with your fore fingers into a thin round circle. Make straight line 
                     markings with a knife or a pizza cutter.



                      Steam for 5 min. & let it cool down before you break loose all pieces. 



                     Heat oil & deep fry them till golden in colour. Drain on a kitchen towel.



                      Serve as tea-time snacks or as appetizers with green chutney, tomato 
                      sauce or mayo.

Dahi Ke Kebab (Hung Yoghurt Kebab)


          
          These irresistible melt in the mouth kebabs are simply mouth watering and yummy in taste and flavor. The main ingredient is hung yoghurt that is mixed with other basic aromatic seasonings. They can either be shallow fried or deep fried. 

          Few make use of paneer and bread crumbs to manage the consistency. But I skipped them and went in for only some roasted chickpea flour. So make these appetizing vegetarian kebab delicacy and relish them as starters with any homemade chutney. Do check out the step by step pictorial recipe to prepare these amazing Kebabs.








  • 400 gms. yoghurt (makes 8 Kebabs)
  • 2-3 tbsp. roasted chickpea flour
  • salt to taste
  • 1/4 tsp. turmeric powder
  • 1/2 tsp. garam masala powder
  • 1/2 tsp. red chili flakes
  • 1 tsp. roasted coriander-cumin powder
  • 1 tsp. crushed kasuri methi 
  • 1-2 green chilies, chopped
  • 1 tsp. ginger, grated
  • 1/4 cup chopped mixed nuts
  • 2 tbsp. dry roasted coconut
  • pinch of pepper powder
  • pinch of cardamom powder
  • 2 tbsp. coriander leaves, chopped
  • 1/2 cup plain flour
  • oil to shallow fry








          Tie the yoghurt in a muslin cloth and place it on a colander in the refrigerator overnight. In a bowl, mix the hung yoghurt along with all the other ingredients (except plain flour and oil). 

          Refrigerate for a couple of minutes. Divide into equal portions and shape into round kebabs. Coat with the plain flour. 
   
          Heat 2 tbsp. oil in a tawa / pan. Shallow fry the kebabs few at a time on both sides till light golden in colour. Drain on a kitchen towel and serve as appetizers with any homemade chutney.




                             Mix hung yoghurt with all ingredients (except plain flour & oil). 



                    Divide into equal portions & give a round shape. Coat with plain flour. 
                    Refrigerate for a couple of minutes.

                          Shallow fry the kebabs few at a time on both sides till light golden. 



Drain on a kitchen towel.






Serve as appetizers with any homemade chutney.
