Sweet Corn Egg Fried Rice

 

           Chinese Egg Fried Rice is a yummy street food and is very popular in all Chinese restaurants. It is very quick and easy to prepare right at home. Assorted veggies that is easily available can be added. The eggs can be either scrambled or made into an omelet and then cut into strips. For a veg. version, simply skip it. 

           In this recipe, I have added sweet corn kernels too along with green chili sauce, tomato sauce and peri peri sauce. You may also add soy sauce if preferred. So adjust the sauces accordingly. This is a simple and a wholesome one pot meal - Chinese style, which can be relished with or without any side dish for lunch, brunch or as a lunch box meal. So check out the step by step pictorial recipe to prepare my version of this great comfort food.





  • 2 cups cooked rice
  • 2 eggs, whisked with a pinch of salt
  • 2 tbsp. butter
  • 1 tbsp. + 1 tsp. olive oil
  • 3-4 garlic clove, chopped
  • 1 onion, sliced
  • 2-3 green chilies. chopped
  • 1/3 cup sweet corn kernels
  • 1 tsp. salt to taste
  • 1/4 tsp. pepper powder
  • 1 tsp. red chili flakes
  • 1 tsp. peri peri sauce
  • 1 tsp. tomato sauce
  • 1 tsp. green chili sauce
  • 1 tbsp. chopped coriander leaves




         Heat 1 tsp. oil in a pan. Add the beaten egg and keep stirring till it is well scrambled. Keep aside.

         In the same pan, heat the butter and remaining oil. Add the garlic and sauté till it changes color. 

         Now add the sliced onion and stir fry till it turns slightly brown in color. 

         Add the chopped green chilies and the sweet corn kernels. Sauté for 1-2 minutes.

         Then add the cooked rice, salt to taste, pepper powder and red chili flakes. Sauté for 2-3 minutes. 

          Add all the three types of sauces and mix well. Continue to stir fry for 1-2 minutes. 

          Finally add the scrambled eggs and chopped coriander leaves. Combine everything well and serve as is or with any non-veg. dish.

Add the chopped green chilies and the sweet corn kernels. Sauté for 1-2 minutes.


Then add the cooked rice, salt to taste, pepper powder & red chili flakes. Sauté for 2-3 minutes. 

          

Add all the three types of sauces & mix well. Continue to stir fry for 1-2 minutes. 


                      Finally add the scrambled eggs


                   and chopped coriander leaves. Combine everything well.


                     Serve as is or with any side dish.

Chinese Egg Fried Rice

 

            Chinese Egg Fried Rice is a yummy street food and is very popular in all Chinese restaurants. It is very quick and easy to prepare right at home. Assorted veggies that is easily available can be added. The eggs can be either scrambled or made into an omelet and then cut into strips. For a veg. version, simply skip it. 

           I have added some homemade red chili-garlic paste instead of tomato sauce, besides green chili sauce and soy sauce. You can adjust the sauces accordingly. This is a simple and a wholesome one pot meal - Chinese style, which can be relished with or without any side dish. So check out the step by step pictorial recipe to prepare this great comfort food.











  • 2-3 cups cooked rice
  • 2 eggs, well beaten
  • 2 tbsp. oil 
  • 1-2 dry red chilies, broken
  • 1 tsp. garlic
  • 2 green chilies, chopped
  • 1/4 cup spring onion (white part), sliced
  • 1 cup bell pepper, capsicum, cabbage, carrot, beans and baby corn, chopped
  • 1/4 cup frozen green peas 
  • 1 tbsp. soya sauce 
  • 1 tbsp. red chili sauce 
  • 1 tsp. green chili sauce
  • pinch of salt or to taste
  • 1/4 tsp. pepper powder
  • 2 tbsp. spring onion (green part), chopped











           Heat 1 tsp. oil in a wok / kadai and stir fry the egg till it is well scrambled. Keep aside.

          Temper the remaining oil with dry red chilies, garlic and green chilies. Sauté till the garlic turns slightly pinkish in colour. 

           Then add the spring onion (white part). Sauté for a minute.

          Now add all the chopped veggies, including green peas and sauté for a minute more. 
  
          Time to add the cooked rice, followed by all the sauces, pinch of salt and pepper powder. Stir fry for 2 minutes.

          When done, add the scrambled egg and sauté for a minute. Garnish with spring onion (green part) and enjoy just as it is or with chili garlic prawns / any side dish.

                                 Enjoy just as it is or with chili garlic prawns / any side dish.

Quinoa Egg Fried Rice


          
          This can be a healthy quick fix one-pot meal on those days when one feels like relaxing without having to strain too much in the kitchen. As we all know Quinoa is a very healthy grain, containing iron, dietary fibre and protein. It is a good substitute to rice or wheat and is highly recommended to include in our diet.

           So here you are...... Quinoa Egg Fried rice....My style. Any other veggies of your choice can be added to make it more nutritious and wholesome. Enjoy it just as it is or with any side dish. So check out the step by step pictorial recipe to prepare it. 








  • 1/2 cup quinoa, soaked for 2 hours
  • 1 cup mixed veggies (carrot, beans, peas, etc,), chopped
  • 2-3 tbsp. ghee
  • 1/2 tsp. cumin seeds 
  • 1-2 bay leaves
  • 1-2 dry red chilies
  • 2-3 garlic cloves, chopped
  • 1" ginger, chopped
  • 1 onion, sliced
  • 1/2 tsp. red chili flakes
  • 1 tsp. garam masala powder
  • salt to taste
  • 2 eggs, well beaten
  • 2-3 tbsp. coriander leaves, chopped








          Cook the quinoa in enough water for 15 minutes or till they are soft. Drain and keep aside. Heat 1 tsp. oil in a pan and scramble the eggs with a pinch of salt. Keep aside. 

          Heat remaining oil and temper with bay leaves, dry red chilies and cumin seeds. Sauté for a few seconds. 

          Add the ginger, garlic followed by the onions. Stir fry till light brown. Add all the chopped veggies and continue to cook, covered till they are soft.

          Now add all the dry spices and give it a stir. Add in the cooked quinoa and stir fry for 2 minutes. Switch off the flame and add the eggs and coriander leaves. 

          Let it remain covered for 2-3 minutes and your quinoa egg fried rice is ready to devour. This healthy one-pot delicacy can be relished as it is or with any side dish. 




                           Heat remaining oil & temper with bay leaves, dry red chilies & 
                           cumin seeds. Sauté for a few seconds. Add ginger, garlic 



                                 and onions. Stir fry till light brown. 



                                Add all chopped veggies & cook, covered till they are soft.



                                Now add all the dry spices & give it a stir. 



                                Add cooked quinoa & stir fry for 2 minutes. 



                                Switch off the flame & add eggs



                               & coriander leaves. Let it remain covered for 2-3 minutes. 






                   This healthy one-pot delicacy can be relished as it is or with any side dish.

Egg Fried Rice


           Have some leftover cooked rice and want to prepare something out of it? Then do try my version of this simple and easy Egg Fried Rice. Enjoy as it is or with some side dish or fryums. They can also be packed as a lunch box meal too. 

          So go ahead and prepare this delicious one-pot wonder for a satisfying comfort food. This is a very quick recipe and few roasted cashews / peanuts can also be added to it for some slight crunch. Check out the step by step pictorial recipe to prepare this amazing one-pot meal.

  • 2 cups cooked rice
  • 2 eggs
  • 1 tbsp. oil
  • 1tbsp. butter
  • 1 onion, sliced
  • 3-4 garlic, sliced
  • 2 green chilies, sliced
  • salt to taste
  • pinch of pepper powder
  • 1 tsp. chili sauce
  • 1 tsp. tomato sauce
  • 1 tsp. peri peri sauce
  • 1 tbsp. coriander leaves, chopped








          Heat oil in a pan and add the onion, ginger, garlic and green chilies. Stir fry till light brown.

          Add the eggs and sauté till the eggs are well scrambled. 

         Then add the rice, pepper powder, salt and all the sauces. Mix everything well and sauté for 2 minutes more. 

         When done, add the coriander leaves and serve as it is or with any side dish.




                    Heat oil and butter in a pan.



                   Add the onion, ginger, garlic and green chilies.



                      Stir fry till light brown.



                       Add the eggs.



                       Sauté till the eggs are well scrambled. 



Then add the rice, pepper powder, salt & all the sauces. Mix everything well & sauté for 2 minutes more. 



                 When done, add the coriander leaves.



                    Serve as it is or with any side dish.
