Fried Chicken


          Fried Chicken is universally popular and is loved by young and old alike. You can enjoy as an appetizer, snack or as a light meal with salad or soup as accompaniments. It is a great comfort meal to many and can be relished with tomato ketchup or green chutney. 

           However, in this recipe, I gave a slight twist and substituted plain flour and bread crumbs with whole wheat flour and brown bread crumbs respectively. Hence the colour, but it turned out very yummy. It can be a great kids meal and a party recipe too. So check the step by step pictorial recipe to prepare it. 







  • 4 chicken drumsticks 
  • pinch of turmeric powder, red chili powder and salt to marinate the chicken
  • 1 egg, well beaten 
  • pinch of salt & pepper
  • 1 cup whole wheat flour 
  • salt to taste
  • 1 tsp. crushed kasuri methi
  • 1/2 tsp. red chili powder
  • 1/2 tsp. garam masala powder
  • 1 tsp. cumin-coriander powder
  • 1/4 tsp. turmeric powder
  • 1 tbsp. garlic-onion powder
  • 1/2 cup brown bread crumbs
  • 1/4 tsp. red chili flakes
  • oil to deep fry





          Marinate the chicken drumsticks with a pinch of salt, turmeric powder and red chili powder for an hour or two.

          Add salt & pepper to the beaten egg. Mix well and keep aside. Mix together the brown bread crumbs with the chili flakes and keep aside.

          In a bowl, mix together whole wheat flour, crushed kasuri methi. red chili powder, turmeric powder, salt, cumin-coriander powder, garam masala powder and garlic-onion powder. Keep aside.

          Heat oil in a pan. Take each chicken drumstick and coat it with the flour mix, egg mix and then the brown bread crumbs respectively.

          Then deep fry them till it is well cooked on a medium flame. Drain on a kitchen towel and serve them hot with tomato ketchup or green chutney.

          


                     Marinate chicken drumsticks with a pinch of salt, turmeric powder &
                     red chili powder for an hour or two.


 
                               Take each chicken drumstick & coat it with the flour mix, 



                                 egg mix and 




                                then the brown bread crumbs respectively.



                           Heat oil & deep fry them on a medium flame till it is well cooked.
          


                                Drain on a kitchen towel. 




                                Serve them hot with tomato ketchup or green chutney.

Chicken Salami Sandwich


          This is a delicious and a sumptuous American style breakfast, layered with mayonnaise, tomato ketchup, lettuce, cheese slices, chicken salami, onion and some tomatoes. It is absolutely a simple and a no frills breakfast that can be dished out in a jiffy. 

           It is no doubt a meal on the go and this sandwich can also be made with brown or white bread slices as per individual preference. This happens to be my most favored breakfast any day.








  • 6 slices of brown bread
  • 6 slices of chicken salami
  • 3 slices of cheese
  • tomato ketchup as required
  • mayonnaise as required
  • sliced tomato as required
  • sliced onion as required
  • lettuce as required
  • pinch of pepper powder





           Spread the tomato ketchup on one side of a bread and mayonnaise on the other bread. Place one salami over one bread slice, followed by a cheese slice, lettuce, onion, tomato, another salami and a sprinkle of some pepper powder. 

          Close with the bread slice that has mayonnaise spread over it. Make another two sandwiches in the similar manner and enjoy as it is for breakfast, snack or when desired.

Spinach Bread Pudding


          
          Ever had spinach as a dessert? Just combine it with brown bread, sugar and milk and you get this slightly unusually healthy dessert which is steamed to perfection. So go ahead and give it a try and enjoy just as it is or as an after-meal dessert. So check out the step by step pictorial recipe to prepare it.








  • 4 slices of brown bread, shred into small pieces
  • 1 - 1&1/2 cups warm milk
  • 1/2 cup spinach puree
  • 1 tbsp. ghee
  • 3-4 tbsps. sugar or to taste
  • 1/2 tsp. cardamom powder
  • 1 tsp. kewra / rose water
  • 2-3 tbsp. sliced almonds and pistachios
  • few extra almonds & pista to garnish








          Mix together bread pieces, sugar, 1/4 tsp. cardamom powder, kewra water and milk. Keep aside to soak for 15-20 minutes.

          Heat ghee in a pan and sauté the spinach puree along with the remaining cardamom powder till all the moisture is evaporated. Set aside to cool and then mix with the bread. Add the sliced nuts too and stir well.


          Pour this bread mix into a greased steel container. Close with an aluminum foil and poke few holes on the surface.

          Steam for 25-30 minutes on a medium flame in a pressure cooker, minus the vent. Set aside to cool and refrigerate for an hour.

          While serving, invert it on a serving plate and garnish with almonds and pistachios. Enjoy just as it is or as an after-meal dessert.




                   Heat ghee & sauté spinach puree with remaining cardamom powder till
                   all the moisture is evaporated. 



                                  Set aside to cool.



                    Mix bread pieces, sugar, 1/4 tsp. cardamom powder, kewra water & milk. 
                    Keep aside to soak for 15-20 minutes.



                                 Add the spinach paste add the sliced nuts. Mix well.



                                 Pour this spinach-bread mix into a greased steel container. 



                    Close with an aluminum foil & poke few holes on the surface. Steam for
                    25-30 min. on a med. flame in a pressure cooker, minus the vent. Set aside
                    to cool and refrigerate for an hour.



                    While serving, invert it on a serving plate & garnish with almonds & 
                     pistachios. Enjoy just as it is or as an after-meal dessert.

Steamed Eggless Bread Pudding


          If you are looking for some easy to make dessert for any festival, then this is the perfect sweet dish that you can prepare in quite a short notice. It is a steamed eggless bread pudding that requires just milk and few bread slices. This way you can make use of all the leftover bread. So go ahead and give it a try by following an easy step by step pictorial recipe to prepare this simple dessert.











  • 4 slices of brown bread, shred into small pieces
  • 1 & 1/2 cups warm milk
  • 2 tbsp. sugar
  • 1/4 tsp. cardamom powder
  • 2 tbsp. raisins
  • 1 tbsp. mixed fruit jam
  • few cherries to garnish








          Add sugar and cardamom powder to the milk and stir till the sugar dissolves. Now add the bread pieces and raisins. Keep aside to soak for 15-20 minutes.

          Now add the jam and mix well. Pour this bread mix into a greased steel container. Close with an aluminum foil and poke few holes on the surface.

          Steam for 25 minutes on a medium flame in a pressure cooker, minus the vent. Set aside to cool and refrigerate for an hour.

          While serving, invert it on to a serving plate and garnish with cherries. Enjoy just as it is or as an after-meal dessert.




                                  Shred bread into small pieces.



                 Add sugar & cardamom powder to the milk & stir till sugar dissolves. 



                                  Add bread slices.



                                  Add raisins & keep aside to soak for 15-20 minutes.



                                  Now add jam & mix well. 



                                 Pour this bread mix into a greased steel container. 



                   Close with an aluminum foil & poke few holes. Steam for 25 min. on a 
                   med. flame in a pressure cooker, minus the vent. 



                                 Set aside to cool & refrigerate for an hour.



                  Invert it on a serving plate & garnish with cherries. Enjoy as it is or as 
                  an after-meal dessert.

Rustic Strawberry Brown Bread


          
          Here is yet another healthy version of a whole wheat flour bread with some pureed strawberry and flavoured with cardamom powder. It is a rustic kind of bread. Easy and simple to prepare, this delicious bread can be enjoyed with butter, jam, eggs or just the way you like it.





  • 2 cups whole wheat flour
  • 1 tsp. active yeast
  • 1 tsp. sugar
  • 1/3 cup lukewarm water
  • 1 tbsp. oil
  • 1/2 tsp. salt
  • 1/4 tsp. cardamom powder
  • 1/3 cup strawberry puree (I used frozen ones)
  • fresh strawberry to garnish (opt)





          In a small bowl, mix together yeast, sugar and lukewarm water. Mix well and cover. Keep aside for 10-15 minutes.

          In a separate bowl, mix together whole wheat flour, salt and cardamom powder. Make a well in the centre and add the oil, followed by the yeast mix and the strawberry puree.

          Combine everything with a spoon. Adjust the puree accordingly. My dough was very soft and loose.

          Set aside for 1-2 hours. Dust some flour and punch back the dough. Make into a round shape. Place on a baking tray lined with butter paper.

          Bake in a microwave oven for 25-30 minutes at 180 degrees C. Transfer to a wire rack and set  aside to cool down. Cut into slices and enjoy with jam, butter or just the way you like it.




                Mix yeast, sugar & lukewarm water. Mix & cover. Keep aside for 10-15 min.



                                After 10 minutes.



                         In a bowl, mix together whole wheat flour, salt & cardamom powder. 



                                 Make a well in the center & add oil, followed by..... 



                                 yeast mix.....




                               .....and strawberry puree.



                                 Mix everything with a spoon.  



                                  After 2 hours.



                        Dust some flour & punch back the dough. Make into a round shape.



                    Place on a baking tray lined with butter paper. Bake in a microwave oven
                    for 25-30 minutes at 180 degrees C. 



                           Cut into slices & enjoy with jam, butter or just the way you like it.
