Chicken Salami Sandwich


          This is a delicious and a sumptuous American style breakfast, layered with mayonnaise, tomato ketchup, lettuce, cheese slices, chicken salami, onion and some tomatoes. It is absolutely a simple and a no frills breakfast that can be dished out in a jiffy. 

           It is no doubt a meal on the go and this sandwich can also be made with brown or white bread slices as per individual preference. This happens to be my most favored breakfast any day.








  • 6 slices of brown bread
  • 6 slices of chicken salami
  • 3 slices of cheese
  • tomato ketchup as required
  • mayonnaise as required
  • sliced tomato as required
  • sliced onion as required
  • lettuce as required
  • pinch of pepper powder





           Spread the tomato ketchup on one side of a bread and mayonnaise on the other bread. Place one salami over one bread slice, followed by a cheese slice, lettuce, onion, tomato, another salami and a sprinkle of some pepper powder. 

          Close with the bread slice that has mayonnaise spread over it. Make another two sandwiches in the similar manner and enjoy as it is for breakfast, snack or when desired.

Couscous & Bell Pepper Salad with Cucumber & Lettuce

       
            A simple and an easy salad of couscous, which is very much used in Mediterranean cuisine. I added some fried chana dal to give a crunchy effect to the salad. The mustard sauce also adds a zing to the end product. A light dinner to be relished to keep you satiated.





  • 1/2 cup couscous
  • 1 cup assorted Bell peppers, sliced
  • 1/2 cucumber, sliced
  • 4-5 lettuce leaves, shredded
  • 2 tbsp. fried chana dal (Bengal gram lentil)
  • salt to taste
  • 1/2 tsp. pepper powder
  • 1 tbsp. lemon juice
  • 1 tbsp. olive oil
  • 1 tbsp. mustard sauce






          Add 1/2 cup hot water to the couscous and cover it. Let it stand for 15 minutes. Then fluff it with a fork and combine with bell peppers, cucumber, lettuce and the fried chana dal.

          Before serving, add the salt, pepper powder, olive oil and lemon juice and toss well. Serve, garnished with mustard sauce.

Green Salad

          
            Healthy and nutritious, they make for a light dinner along with some hearty soup. There are many variations to this salad, depending on the availability of the ingredients.  A little bit of mix and match of the following ingredients does wonders to this dish. Baby spinach, too, can be added if preferred. 






  • 1 cup lettuce, shredded
  • 1/2 cucumber, sliced
  • 1/2 green bell pepper, sliced
  • 1 cup broccoli florets, blanched
  • 1/2 cup beans, chopped and boiled al dente
  • 1/2 cup spring onion, chopped
  • 1/2 cup green peas, boiled
  • 1/2 cup coriander leaves, chopped
  • 2 tbsp. mint leaves, chopped
  • 1/2 cup moong dal sprouts (whole green gram), steamed
  • juice of 1/2 lime
  • salt to taste
  • 1/4 tsp. pepper powder
  • 2 tbsp. olive oil
  • cheese, lemon slices, tomato slices and red chili sauce to garnish




          Mix together all the ingredients in a big bowl. Serve, garnished with cheese, lemon slices, tomato slices and chili sauce.
