Here is yet another healthy version of a whole wheat flour bread with some pureed strawberry and flavoured with cardamom powder. It is a rustic kind of bread. Easy and simple to prepare, this delicious bread can be enjoyed with butter, jam, eggs or just the way you like it.
- 2 cups whole wheat flour
- 1 tsp. active yeast
- 1 tsp. sugar
- 1/3 cup lukewarm water
- 1 tbsp. oil
- 1/2 tsp. salt
- 1/4 tsp. cardamom powder
- 1/3 cup strawberry puree (I used frozen ones)
- fresh strawberry to garnish (opt)
In a small bowl, mix together yeast, sugar and lukewarm water. Mix well and cover. Keep aside for 10-15 minutes.
In a separate bowl, mix together whole wheat flour, salt and cardamom powder. Make a well in the centre and add the oil, followed by the yeast mix and the strawberry puree.
Combine everything with a spoon. Adjust the puree accordingly. My dough was very soft and loose.
Set aside for 1-2 hours. Dust some flour and punch back the dough. Make into a round shape. Place on a baking tray lined with butter paper.
Bake in a microwave oven for 25-30 minutes at 180 degrees C. Transfer to a wire rack and set aside to cool down. Cut into slices and enjoy with jam, butter or just the way you like it.

After 10 minutes.

Bake in a preheated microwave oven at 180 degrees C for 25-30 minutes. Let it cool down a bit and then scrape away the sides.
Flip it over carefully and set aside to cool further on a wire rack. Garnish with jam and a sprinkle of powdered sugar. Cut into slices and relish with a jam or butter spread or anyway you like it.

This is just like any other homemade bread but with a difference. I added some spices like cumin seeds and nigella seeds to try out something new. The baking was done in the convection mode of a microwave oven at 180 degrees c for 40 minutes. So enjoy as a tea time snack or for breakfast.
- 1 cup Atta (whole wheat flour)
- 1 1/2 cups maida (plain flour)salt to taste
- 2 tsp. active yeast
- 2 tsp. sugar
- 3/4 cup lukewarm water
- 3 tbsp. oil
- 1 tsp. nigella seeds (kalonji)
- 1 tsp. cumin seeds
- 2 tbsp. oats
- oil to grease the loaf tin
- butter to brush
In a bowl, mix together the yeast, sugar and water. Cover and leave aside for 10-15 minutes. By then it will have swelled up and become frothy. Grease a loaf tin and keep aside.
Sift together atta and maida. Add salt, nigella seeds, cumin seeds and 2 tbsp. oil. Mix well till it resembles bread crumbs. Add the oats and combine.
Now add the yeast mix and required quantity of water. knead into a smooth dough. Add 1 tsp. oil and continue to knead for approx 15 minutes till all the oil is absorbed.
Apply some oil all over and leave it to rest in a greased bowl in a warm place for an hour.
By then the dough will have doubled in size. Knead again for 5-10 minutes by adding some more oil.
Give a log shape to the dough. Brush with some oil on the surface and sprinkle oats over it. Transfer to the loaf tin and leave it to rest in a warm place for another 25-30 minutes.
Preheat the oven for 5 minutes at 180 degrees C. Bake for 40 minutes. After 30 minutes, cover the tin with a foil and continue to bake. (I baked in a microwave oven in the convection mode).
Let it rest for 15 minutes. Take it out of the oven. Check by tapping. It should sound hollow. Apply butter over the surface and allow it to stand for 10 minutes.
Flip it over on the rack and let it cool down considerably. Store in an airtight container. Slice and serve with jam / bread or as desired.

Bake at 180 degrees C. for 40 minutes.
Keep aside to cool on the rack before slicing them to serve.
