Sausage Fried Rice - Chinese style

 

          Check out this quick one pot meal of Chinese style Sausage Fried Rice. This is a very easy and a simple recipe that can be dished out in a jiffy. Any leftover rice can be made use of to prepare this yummy recipe. 

          Minimum of spices goes into it, yet there is no compromise in the taste and flavor. Assorted veggies that is easily available can be added. (For a veg. version, simply skip the sausages). It is light on the tummy and can be enjoyed just as it or with some side dish. So give a quick look at the step by step pictorial recipe to prepare it.






  • 2 cups cooked rice
  • 2-3 sausages
  • 2 tbsp. oil 
  • 1 tsp. garlic
  • 1/4 cup spring onion (white part), sliced
  • 1/2 cup bell peppers & capsicum, chopped
  • 1/4 cup frozen green peas 
  • 1 tbsp. soya sauce 
  • 1 tbsp. chili sauce 
  • 1 tbsp. tomato ketchup
  • pinch of salt or to taste 
  • 1/4 tsp. pepper powder
  • 2 tbsp. spring onion (green part), chopped








          Heat oil in a wok and stir fry the sausages till light brown. Keep aside to cool and then slice them diagonally.

          Temper the remaining oil with red chilies, garlic and spring onion (white part). Sauté for a minute.

          Now add the chopped bell pepper, capsicum and green peas. Sauté for a minute more. 
  
          Time to add the cooked rice, followed by all the sauces and pinch of salt. Stir fry for 2 minutes.

          Lastly add the fried sausages and pepper powder. Sauté for a minute and switch off the flame. Garnish with spring onion (green part) and enjoy.


                     Heat oil in a wok & stir fry the sausages till light brown. Keep aside to cool

                     and then slice them diagonally.

                                 Time to add the cooked rice,

                   Lastly add the fried sausages & pepper powder. Sauté for a minute and switch
                   off the flame. 



                                   Garnish with spring onion (green part) and enjoy.

Prawn & Sausage Bhel

 

          Bhel Puri is a very popular Mumbai style street food / chaat liked by young and old alike. This is my favourite too. The main ingredient is puffed rice, which is served along with chopped onion, boiled potatoes, tomatoes, chilies, sev, papdi, farsan and various types of spicy and tangy chutneys. 

          However, I gave a slight twist by adding some sautéed prawns and chicken sausages. I skipped the chutneys though and kept it dry. It turned out super yummy and appetizing. This fusion non-veg. bhel is a must try recipe. Instead of the mandatory chutneys, I relished with some chili mayo and it turned out to be a mind blowing combo. So do give it a try and I'm sure you'll enjoy this delectable chaat.





          You can enjoy this bhel as a snack or anytime of the day. In fact, I sometimes like to have it as a light dinner. 

          It is an absolutely easy recipe and best enjoyed immediately before it turns soggy. Apart from the ingredients I used, you can also add sprouts, chopped bell pepper, capsicum or dry fruits.




  • 10-12 prawns, deveined & cleaned 
  • 2-3 chicken sausages, sliced
  • 1-2 tbsp. oil
  • pinch of salt, turmeric powder and red chili powder
  • 2-3 cups puffed rice 
  • 2 tbsp.  fine sev (savoury noodles)
  • 8-10 small papdis, crushed
  • 2 tbsp. mixture (farsan)
  • 2 tbsp. plain boondi
  • 2 tbsp. roasted peanuts
  • 1-2 tbsp. roasted chana dal
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1/2 cup cucumber, chopped
  • 1 small potato, boiled & chopped
  • 1/4 cup kabuli chana, boiled
  • 1-2 green chilies, chopped
  • 2-3 tbsp. coriander leaves, chopped
  • 2 tbsp. fresh grated coconut 
  • 1/2 tsp. red chili flakes
  • pinch of salt 
  • 1/2 tsp. roasted cumin powder
  • 1/2 tsp. chaat masala 
  • 1 tsp. lime juice






          Marinate the prawns with a pinch of salt, turmeric powder and red chili powder for 5-10 minutes. 

          Meanwhile, heat oil in a pan and sauté the sliced sausages till light brown. Keep aside. In the same oil stir fry the prawns for 2-3 minutes. Drain and keep aside to cool down. 

          In a large bowl, mix together all the mentioned ingredients. Transfer to a serving bowl or individual bowls and serve immediately for a yummy evening snack.

Omurice (Japanese Fried Rice with Omelette)

 

          Omurice is a Japanese fried rice, topped with an omelette and a drizzle of some tomato sauce / ketchup. It is a very popular cuisine that is enjoyed by all. It is quite an unique recipe and the plating is just amazing. The classic version has chicken cubes, but I prepared with chicken sausages. In fact it can be prepared with pork, beef or bacon too. So do give it a try by checking out an easy step by step pictorial recipe to prepare it. 





          Adding veggies to Omurice is purely optional. You can add any of your choice. I went in for some finely chopped carrot and french beans along with some frozen green peas. It is slightly on the sweeter side. To sum up it is a one-pot meal that is so simple, yet yummy and comforting. Every household has its own version of making this amazing dish. 







  • 2 cups cooked rice 
  • 2 chicken sausages, sliced
  • 1 onion, chopped 
  • 1 tsp. garlic, chopped 
  • 1-2 green chilies, chopped (opt)
  • 1/3 cup beans & carrots, finely chopped
  • 1/4 cup green peas
  • 2 tbsp. tomato sauce / ketchup
  • salt to taste (opt)
  • 1 chicken stock cube, crumbled
  • 1 tomato, chopped
  • 1/2 tsp. pepper powder
  • 2 tbsp. spring onion, chopped
  • 2 eggs, beaten with a pinch of salt & pepper powder
  • 2 tbsp. oil
  • 1 tbsp. butter
  • extra tomato sauce / ketchup & chopped spring onion to garnish






          Heat oil in a pan and sauté the garlic, onion and green chilies till light brown. 

          Add the sausages and stir fry for 1-2 minutes. Now add the veggies and cover and cook till it turns soft. 

          Add the tomato sauce / ketchup and the stock cube. Give it a stir and then add the chopped tomatoes. Cook till it turns soft. 

           Add the cooked rice, pepper powder and salt if needed. Mix everything well and sauté for a minute. When done, switch off the flame and garnish with chopped spring onion. Keep aside.

           Heat butter in a tawa / griddle and prepare an omelette with the beaten eggs. To assemble - Use a bowl as a mold to give a nice round / oval shape.

           Gently place the omelette over the rice and drizzle the tomato sauce / ketchup over it. 

           Garnish with some chopped spring onion if you wish and it is then ready to enjoy. 

          


                    Heat oil in a pan & sauté the garlic, onion & green chilies till light brown. 



                                  Add the sausages and stir fry for 1-2 minutes. 



                                  Now add the veggies and cover and cook till it turns soft. 



                                  Add the tomato sauce and the stock cube. Give it a stir.



                                  Then add the chopped tomatoes. Cook till it turns soft. 



                      Add the cooked rice, pepper powder & salt if needed. Mix everything well                                          and sauté for a minute.


                     When done, switch off the flame & garnish with chopped spring onion. 


                           Heat butter in a tawa & prepare an omelet with the beaten eggs.                                     


                      To assemble - Use a bowl as a mould to give a nice round / oval shape. Gently 
                      place the omelette over the rice. 



                      Drizzle some ketchup over it. Garnish with some chopped spring onion if 
                      you wish and it is then ready to enjoy.

Chicken Sausage in Tomato Makhani Gravy


          Chicken sausages are always welcome and liked by most people. In fact they are absolutely easy and simple to prepare in your own kitchen. There is no need to go in for the store bought ones. Serve them as it is, with toasted bread or as hot dog. 

          So how about some leftover homemade sausages cooked in a creamy tomato makhani gravy? This is exactly what I did and should confess that it turned out really yummy. You can relish as a side dish with any form of rice or Indian bread. So check the step by step pictorial recipe to prepare it.









Chicken Sausage -
  • 1 chicken breast, ground to a smooth paste (makes 4-5 sausages)
  • 1 small onion, chopped finely
  • 1 tsp. ginger, grated
  • 2-3 garlic cloves, grated
  • 1-2 green chilies, chopped
  • 2 tbsp. coriander leaves
  • 2-3 tbsp. grated cheese
  • salt to taste
  • 1/4 tsp. turmeric powder
  • 1/2 tsp. garam masala powder
  • 1 tsp. lime juice
  • 2-3 tbsp. oil 





          In a bowl, combine all the above mentioned ingredients into a dough. Refrigerate for 25-30 minutes.

          Take a small portion of the dough and form into a log. Place it on a greased aluminum foil and wrap it by fastening both the ends securely. Make similar sausages with the remaining dough.

          Bring sufficient water to a boil. Drop the wrapped sausages in it and cook on a medium flame, covered for 8-10 minutes. Drain and allow it to cool down, before unwrapping them.

            Heat oil in a pan and shallow fry the sausages till light golden in colour. Drain and keep aside.


     




Tomato Makhani Gravy - 

  • 1 onion, roughly chopped
  • 2 tomatoes, roughly chopped
  • 1" ginger
  • 2-3 garlic cloves
  • 2 green chilies
  • 8-10 cashew nuts, soaked for 15 minutes
  • 3 tbsp. oil
  • 1/2 tsp. cumin seeds 
  • 1-2 dry red chilies
  • 1" cinnamon stick
  • 2 green cardamoms
  • 3-4 cloves
  • 1/4 tsp. asafoetida
  • 1 tsp. coriander powder
  • 1 tsp. cumin powder
  • 1/2 tsp. turmeric powder
  • 1 tbsp. red chili powder
  • 1/2 tsp. garam masala powder
  • salt to taste
  • pinch of nutmeg powder
  • 1 tsp. kasuri methi, crushed 
  • 2-3 tbsp. cream
  • 1 tbsp. coriander leaves, chopped
  • 1 tsp. ghee






          Grind cashew, onion, tomatoes, ginger, garlic and green chilies into a smooth paste. Keep aside. 

          Heat oil in a pan and temper with cumin seeds, cinnamon, cardamoms, cloves, dry red chili and asafoetida. Sauté for a few seconds. 

          Add all the dry spices and stir fry for a few seconds more. Add the ground paste and cook, covered for 4-5 minutes on a low flame. 

          Add the kasuri methi, nutmeg powder and salt. Stir fry till the oil separates. Add the cream and mix well.

          Add 1 cup water and the fried sausages. Cover and cook for 3-4 minutes. Switch off the flame. Add the ghee and coriander leaves. 

          Give it a stir and transfer to a serving plate. Serve as a side dish with any form of rice or Indian bread.




                                 Grind cashew, onion, tomatoes, ginger, garlic & green chilies
                                 into a smooth paste. Keep aside. 




                                The boiled sausages.



                                Unwrap them when it cools down.



                                Slice them as desired. 



                                Heat oil & shallow fry sausages till light golden in colour. 
                                Drain and keep aside.




                                Heat oil & temper with cumin seeds, cinnamon, cardamoms, 
                               cloves, dry red chili & asafoetida. Saute for a few seconds. 



                                Add all dry spices and stir fry for a few seconds more. 



                         Add ground paste & cook, covered for 4-5 minutes on a low flame. 




                         Add kasuri methi, nutmeg powder & salt. Stir fry till oil separate.
                       



                                 Add the cream and mix well.



                          Add 1 cup water & fried sausages. Cover & cook for 3-4 minutes. 



                               Switch off flame. Add ghee & coriander leaves. Give it a stir.






                               Serve as a side dish with any form of rice or Indian bread.
