Egg Rice Frittata / Omelette

 

          This is a very easy and a fuss-free egg based recipe. If you have any leftover rice, pulao, biryani, etc. then you can easily prepare this one-dish wonder. I topped it up with some sliced sausages. It is almost similar to Japanese Omurice, but with a twist. It also resembles a pizza, minus the cheese. You may add so if preferred. Kids, especially will simply love this amazing creation. 

        


          You can go ahead and add any toppings of your choice, like boiled & shredded chicken, sautéed prawns, mushroom, any diced veggies, cheese, etc. It is ideal for breakfast and anytime you prefer something light. 



          So enjoy as it is or with tomato sauce / any chutney. I served mine with homemade yoghurt garlic sauce. Check out the step by step pictorial recipe to prepare this fusion treat. 





  • 3 eggs, well beaten 
  • 1/3 cup cooked rice
  • 1/2 cup parsley, chopped
  • 1/4 tsp. salt or to taste 
  • pinch of pepper powder
  • 2-3 tbsp. oil 
  • 2-3 garlic cloves, chopped
  • 1 green chili, chopped
  • 1 onion, chopped
  • 2-3 chicken sausages, chopped
  • chutney or tomato sauce to serve





          To the beaten egg, add cooked rice, chopped parsley, salt and pepper powder. Mix well and keep aside. 

          Heat oil in a pan and sauté the sausages lightly. Drain and keep aside. In the same oil stir fry garlic and green chilies. Then add the onion and stir fry till light brown. 

          Add the egg mix and top it up with the sausages. Cook on a low flame till it is set on one side. 

          Gently flip it over and cook the other side till done. Serve hot with tomato sauce or any homemade chutney.

Mushroom Pizza


          Pizza is obviously the most loved and the best comfort food of all. It is enjoyed by all generations alike. So let me share an easy and a yummy homemade mushroom pizza which has no yeast and is made of whole wheat flour. 

          It is prepared in two ways - in a pan and oven baked. So get going and dish out this amazing snack and enjoy with your loved ones. With one bite of it there will be many expressions. So check out the step by step pictorial recipe to prepare it.















Pizza Dough - (Makes 2)

  • 1 cup whole wheat flour (atta)
  • 1 tbsp. olive oil
  • 2 tbsp. yoghurt
  • 1/2 tsp. sugar
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • pinch of red chili flakes 
  • pinch of oregano

Instant Pizza Sauce - 

  • 1/2 cup bottled tomato sauce
  • 1/4 tsp. red chili flakes
  • 1/4 tsp. oregano
  • 1 tbsp. oil
  • 2 cloves garlic, grated
  • 1 tbsp. fried onion

Garnishing - 

  • 1 tbsp. oil
  • 1 cup grated mozzarella cheese or as needed
  • 2 pinches of oregano
  • 2 pinches of red chili flakes
  • 2 tbsp. fresh rosemary herbs
  • 5-6 mushrooms, sliced











          Pizza Dough - In a bowl mix together all the ingredients and knead into a dough with required quantity of water. Cover and keep aside for 15-20 minutes.

          Instant Pizza Sauce - In a small bowl mix together all the mentioned ingredients and keep aside.

           Pan Pizza - Divide the dough into 2 portions. Roll out one portion into a round disc and pierce with a fork all over.

          Heat a pan and brush with some oil. Gently place the rolled out dough and cook, covered on a very low flame for 2-3 minutes.

          Take the pan off the flame and flip it over. Now spread the pizza sauce and top it up with cheese, sliced mushroom, rosemary, chili flakes, oregano and a drizzle of 1 tsp. oil.

          Cover and cook on a low flame for 3-4 minutes or till the cheese melts. Switch off the flame and transfer to a serving plate. Cut as desired and enjoy.

          Baked Pizza -  Roll out the other portion into a round disc and pierce with a fork all over.  Spread the pizza sauce, followed by cheese, sliced mushroom, rosemary, chili flakes, oregano and a drizzle of 1 tsp. oil.

          Bake in a preheated oven at 200 degrees C. for 15 minutes or till the cheese melts. Transfer to a serving plate, cut as desired and enjoy.




                     Pizza Dough - Mix all ingredients & knead a dough with some water. 
                     Cover & keep aside for 15-20 min.



                       Instant Pizza Sauce - In a small bowl mix together all the ingredients.



                        Roll out one portion into a round disc & pierce with a fork all over.



                       Heat pan & brush with some oil. Place rolled out dough & cook, covered 
                       on a very low flame for 2-3 minutes.



                       Take the pan off the flame & flip it over. Now spread the pizza sauce and
                       top it up with cheese, sliced mushroom, rosemary, chili flakes, oregano &
                       a drizzle of 1 tsp. oil.



                        Cover & cook on a low flame for 3-4 minutes or till the cheese melts. 



                        Switch off flame & transfer to a serving plate. Cut as desired & enjoy.



                        Alternatively, bake in preheated oven at 200 degrees C. for 15 minutes
                        or till cheese melts. 






                               Transfer to a serving plate, cut as desired and enjoy.

Fruity Malpua Pizza - Fusion Style


          PIZZA is an universally favourite fast food. So now how about having it as a dessert? Here is my version of a 'FRUIT PIZZA' that can be served as an after-meal dessert. There are two other sweets hidden in it -  The pizza base is that of MALPUA, which is generously spread with SHRIKHAND (hung yoghurt) and finally topped with some colourful fruits. 

          I tried to keep this amazing pizza, simple, healthy and appealing. Any other variety of fruits can be used. So go ahead and create your own fruit pizza by checking out the step by step pictorial recipe to prepare this visual treat.









Ingredients for Malpua - 

  • 1/4 cup whole wheat flour (atta)
  • 1/4 cup semolina (sooji)
  • 1 -2 tsp. sugar or to taste
  • pinch of cardamom powder
  • 1/2 tsp. fennel seeds (saunf)
  • milk as required
  • oil to shallow fry

Ingredients for pizza sauce - 

  • 400 gms. yoghurt
  • powdered sugar to taste

Toppings - 

  • black grapes
  • plums
  • watermelon
  • kiwi
  • any other fruits too, can be added








          To prepare the sweet pizza sauce - Pour the yoghurt in a cheesecloth and place it on a strainer. Keep a bowl under it and refrigerate overnight. 

         The thick hung yogurt is used in this recipe. Add powdered sugar to taste and mix well. Keep aside.

         To prepare malpua / pizza base - In a bowl, mix together all the ingredients (except milk and oil). Add milk little at a time and prepare a batter. Keep aside for 15-20 minutes. 

         Adjust the consistency. Add more milk / water if required as the batter should be of pouring consistency.

          Heat 1-2 tsp. oil and pour 2-3 ladleful of the batter (makes 2 malpuas). Cook on both sides on a medium flame till light golden in colour. Drain on a kitchen towel. Prepare the other malpua too.

          To assemble the final Pizza - On the malpua, spread the hung yoghurt generously and top it up with your favourite fruits in a nice, attractive pattern.

          Refrigerate for an hour. Cut into slices and serve as an after-meal dessert.




                 Pour yoghurt in a cheese cloth & place on a strainer. Keep a bowl under it
                 & refrigerate overnight. The thick hung yoghurt is used in this recipe.

                     Keep aside for 15-20 minutes. 



                                 Heat 1-2 tsp. oil & pour 2-3 ladleful of the batter.



                   Cook both sides on med. flame till light golden. Drain on a kitchen towel.



                                 Slice / chop fruits as desired.



                                Take one malpua.....



Spread hung yoghurt over it.



Place fruits as desired in an attractive pattern. Refrigerate for an hour.
                       Cut into slices & serve as an after-meal dessert.
