Masala / Podi Sundal (Chickpea Snack - Tamilian Cuisine)

 

          This is a very popular and a healthy chickpea snack found in South India, especially Tamil Nadu. I was introduced to this simple and easy snack during my stay in Chennai. They are usually served in temples and also can be found being sold in beaches and parks. So it is a quick fix when you need something quick and healthy.

          As chickpeas contain high protein, they can be relished anytime of the day. But it is best relished as an evening snack along with a cup of hot tea or coffee. It can be prepared with or without adding the masala podi. So check out the step by step pictorial recipe to prepare this yummy snack.








  • 1 cup white chickpeas, boiled
  • 1 tbsp. oil
  • 1 sprig curry leaves
  • 1 whole red chili, broken
  • 1 green chili, chopped
  • 1/2 tsp. mustard seeds
  • 1 tsp. urad dal (split black gram)
  • 1/4 tsp. asafoetida
  • salt to taste
  • 2 tbsp. idli podi
  • 1/4 cup fresh coconut, grated
  • 2 tbsp. coriander leaves, chopped
         







         Heat oil in a pan and temper with red chilies, mustard seeds, green chili, urad dal, asafoetida and curry leaves. Sauté for a minute.

          Add the boiled chickpeas, idli podi and salt. Sauté for a minute.

         Add the grated coconut and coriander leaves. Give it a toss and switch off the flame. Enjoy as a snack.




Heat oil in a pan & temper with red chilies, mustard seeds, green chili, urad dal, asafoetida & curry leaves. Sauté for a minute.



                 Add the boiled chickpeas, salt



                  and idli podi. Sauté for a minute.



                     Add the grated coconut and coriander leaves. 



                   Give it a toss and switch off the flame.



                      Enjoy as a snack.

Falafel (Fried Chickpea Dumplings - Middle Eastern Snack)

 

            Falafels are very popular Middle Eastern street food made of soaked & ground chickpeas, herbs, onion, garlic and other basic seasonings. They are then formed into balls and deep fried. So the texture is crisp from the outside and soft inside. They can be enjoyed as an appetizer with hummus or as a main course inside pita breads and salads. You can also wrap them in parathas, khubz or tortillas for a meal on the go.






           In this recipe, I made use of a falafel maker to prepare these falafels. However, you can make them easily with your hands or can use an ice cream scoop. 

           Try serving them with some green chutney instead, a la Indian style. I sometimes make Indian chaat / Falafel Kadhi / Kofta Curry with the leftover falafels. So check out the step by step pictorial recipe to prepare it.





  • 1 cup kabuli chana (white chickpeas), soaked overnight
  • salt to taste
  • handful of coriander leaves
  • handful of parsley leaves
  • 3-4 cloves, garlic
  • 1 onion, chopped
  • 1 tbsp. roasted coriander-cumin powder
  • 1/2 tsp. pepper powder
  • 1/2 tsp. red chili powder
  • a pinch of baking soda
  • 2 tbsp. plain flour
  • 1 tsp. lime juice
  • oil to deep fry








          Blend together all the above mentioned ingredients (except oil) without adding any water. 

          Prepare small equal sized balls out of the ground mix with the help of a falafel maker. Refrigerate for an hour.

          Heat oil in a pan and fry the falafels in batches in a low to medium flame till  golden brown in colour. 

          Drain on a kitchen towel and serve hot as a snack with hummus or with pita bread and salad.




       Blend together all the above mentioned ingredients (except oil) without
       adding any water. 



         Prepare small equal sized balls out of the ground mix with the 
         help of a falafel maker. Refrigerate for an hour.



            Heat oil & fry the falafels in batches in a low to medium 
            flame till golden brown in colour. 



                  Pick them up with a slotted spoon. 



                Drain on a kitchen towel.



    Serve hot as a snack with hummus or with pita bread and salad.

















Hummus (Chickpea Dip - Mediterranean style)

 

          This is a traditional Middle Eastern dip / spread, made of boiled chickpeas and blended with other ingredients. A very healthy and a nutritious dip which is usually relished with Arabic bread. However, it goes well with veggie crudités too. A few garlic cloves and Tahini or sesame seeds gives an unusual flavor. There is nothing like having a creamy homemade hummus for a comforting weekend snack. So check out the step by step pictorial recipe to prepare this heavenly delight. 




  • 1 cup kabuli chana (white chickpeas), soaked overnight
  • 1 pinch of baking soda
  • 3 tbsp. olive oil
  • 2 garlic cloves
  • 2-3 tbsp. lemon juice
  • 1/4 cup sesame seeds / tahini paste
  • 1/2 tsp. roasted cumin powder
  • salt to taste
  • 2-3 tbsp. chilled water / 2-3 ice cubes
  • 1-2 tbsp. olive oil, red chili powder and few boiled kabuli chana to garnish








          Pressure cook the kabuli chana along with a pinch of baking soda for 5-6 whistles or till soft. Leave aside few to garnish. 

         When cool, blend with olive oil, garlic, sesame seeds, cumin powder, lemon juice and salt to taste. 

          Scrape the sides and blend again along with some chilled water / ice cubes till you get a smooth texture. 

          Transfer the hummus onto a plate / bowl. With the back of a spoon, create few swirls and make a dent in the center.  

          Pour olive oil, few boiled chickpeas and garnish with red chili powder, cumin powder and a sprig of parsley.

         Have it as a dip with falafel, vegetables crudités, kubus bread, pita bread or chips. It can also be had as a spread on breads and parathas, a la Indian style.

         whistles. When cool, blend with olive oil, garlic, sesame seeds, 

         cumin powder, lemon juice and salt to taste.

Kadala Curry (Black Chickpeas Curry - Kerala Style)

 

               Kadala Curry is a traditional Kerala style side dish served as breakfast with Puttu. Hence, this recipe is also known as Puttu Kadala Curry. Kadala means kabuli chana or chickpeas and is a popular Kerala cuisine. 

               They can also be relished with Appam, Idiyappam, Chapatti, poori, Dosa or Paratha with some sliced onion, green chilies and lime wedges as an accompaniment if desired. 



               The gravy is full of flavor coming from the fried coconut and a medley of spices that goes into making this classic dish. 

               A tempering of mustard seeds, curry leaves, dry red chilies and onion in coconut oil takes this versatile dish to the next level. 

               So check out the step by step pictorial recipe to prepare this yummy and hearty regional delicacy.



  • 1 cup black chickpeas, soaked overnight
  • 1/3 cup fresh grated coconut
  • 2 onion, sliced
  • 1" ginger. chopped
  • 3-4 cloves, chopped
  • 1-2 green chilies
  • 1 tomato, chopped
  • 1 tsp. red chili powder
  • 1 tsp. fennel powder
  • 1 tbsp. coriander powder
  • 1/2 tsp. pepper powder
  • 1/2 tsp. turmeric powder
  • salt to taste
  • 1 tsp. garam masala powder
  • 3-4 tbsp. coconut oil
  • 2 dry red chilies
  • 1/2 tsp. mustard seeds
  • 1 sprig curry leaves
  • 1 tbsp. coriander leaves, chopped






          Pressure cook the soaked chickpeas and salt to taste in 2 cups water for 5-6 whistles or till soft. 

          Heat 1 tsp. oil in a pan and dry roast the coconut till light brown. Keep aside to cool. 

          Heat 1 tbsp. oil and sauté one onion, ginger, garlic and green chilies till light brown.

          Add all the dry spices mixed with 1/2 cup water. Sauté for a minute. 

          Now add the tomatoes and sauté till it is mashed. Keep aside to cool. Then blend along with the fried coconut into a smooth paste.

          Into the pan add 1/3 cup boiled chickpeas and mash it with a potato masher.

           Then add the ground paste and the boiled chickpeas along with the water. Adjust the consistency. 

           Add some hot water if you want a thin gravy. Mix well and simmer for 4-5 minutes. Transfer to a serving dish.

          Heat remaining oil in a pan and temper with dry red chilies and mustard seeds. After it stops spluttering, add the curry leaves and remaining onion. Sauté till light brown.

          Now pour this tempering over the kadala curry and garnish with chopped coriander leaves.

          Serve with puttu, appam or idiyappam for a comfort Kerala meal. You may also relish with steamed rice or any flat Indian bread. 


                      Pressure cook the soaked chickpeas & salt to taste in 2 cups water for 

                      5-6 whistles or till soft. 


                      Heat 1 tsp. oil & dry roast the coconut till light brown. Keep aside to cool. 


                        Heat 1 tbsp. oil & sauté one onion, ginger, garlic & green chilies till 

                        light brown.



                         Add all the dry spices mixed with 1/2 cup water. Sauté for a minute. 


                                  Now add the tomatoes and sauté.....



                                  .......till it is mashed. Keep aside to cool. 


                                 Then blend along with the fried coconut into a smooth paste.


                       Into the pan add 1/3 cup boiled chickpeas & mash it with a potato masher.


                                  Then add the ground paste......


                       and the boiled chickpeas along with the water. Adjust the consistency. 

                      Add some hot water for a thin gravy. Mix well & simmer for 4-5 minutes. 


                                 Transfer to a serving dish.


                       Heat remaining oil & temper with dry red chilies and mustard seeds.


                        After it stops spluttering, add the curry leaves & remaining onion. 

                        Sauté till light brown.


                                 Pour this tempering over the kadala curry.
