Here is an unusual way of serving your normal everyday cheela / pancake. Add some paneer stuffing and then grill on an open flame or in any sandwich maker. Healthy, wholesome and yummy, they are an ideal breakfast or brunch recipe. I have also added some mixed millets to make them more nutritious.
Enjoy along with tomato ketchup or any homemade chutney. You may relish as a tea-time snack, meal on the go, after school snack or as a lunch box meal. Choice is yours. Any other stuffing of your choice and / or cheese may be added.
Stuffing -
- 100 gms. paneer, mashed
- 1 small potato, boiled & mashed
- 2 tbsp. fried onions
- 1-2 green chilies, chopped
- 2-3 tbsp. coriander leaves, chopped
- salt to taste
- 1/2 tsp. turmeric powder
- 1 tomato, chopped
- 4-5 tbsp. coloured bell peppers, chopped
- 1 tsp. sesame seeds
- 1/2 tsp. chili flakes
- 1/2 tsp. garam masala powder
- 1 tsp. lime juice
- pinch of pepper powder
Cheela -
- 1 tbsp. each of masoor, chana, urad, moong and tuvar dal
- 1 tbsp. each of foxtail, kodo & little millet
- 1 tsp. ginger-garlic, grated
- 2 green chilies, chopped
- salt to taste
- 1/2 tsp. turmeric powder
- 1/2 tsp. garam masala powder
- oil to shallow fry
Sandwich -
- butter as required
Stuffing - In a bowl. mix together all the ingredients and keep aside.
Cheela - Soak the lentils and the milles in sufficient water for 5-6 hours. Grind along with some water to a smooth paste. Add rest of the ingredients and keep aside.
Heat a non-stick tawa and brush with some oil. Pour a ladleful of the batter and spread it around into a circle.
Drizzle some oil on the edges and cook on a low flame on both sides till light brown in colour. Transfer to a plate. Make similar cheela with the remaining batter.
Sandwich - Grease a open flame sandwich maker and place one cheela. Put some of the stuffing in the centre and cover with another cheela.
Close and grill on an open flame for 2 minutes on each side or till done. Allow it to cool before demoulding it. Make similar sandwiches and serve with some tomato sauce or any homemade chutney.
