Ever tried Noodles in Kadhi a la fusion style? It is simply an amazing one pot delicacy. Enjoy it as a soup or with rice. Both ways it is yummy. Rice and noodles together is just something new, but I enjoyed it.
So have any leftover noodles? Dunk them in some kadhi and voila! you have a new innovative comfort meal in no time. Have as a snack or for a light meal. Choice is yours. So a next bundle of surprise for your family and friends.
- 1/2 packet of maggi noodles, boiled & drained
- 1/2 cup yoghurt
- 2-3 tbsp. roasted chickpea flour
- salt to taste
- 1/2 tsp. turmeric powder
- 1/2 tsp. chili flakes
- 1/2 tsp. coriander powder
- 1/2 tsp. cumin powder
- 1/2 tsp. crushed kasuri methi
- 1 tbsp. oil
- 1/2 tsp. cumin seeds
- pinch of fenugreek seeds
- 1/4 tsp. asafoetida
- 1 tsp. ginger-garlic paste
- 1 tsp. coriander leaves, chopped
Blend together chickpea flour, yogurt and all the dry spices. Keep aside.
Heat oil in a pan. Temper with cumin seeds, fenugreek seeds and asafoetida. Saute for a few seconds and then add the ginger-garlic paste. Stir fry for a minute.
Add in the yoghurt mix and bring it to boil. Simmer on a low flame till it turns thick to the right consistency. Switch off the flame.
Transfer the contents to a serving bowl. Just before serving, add the noodles and garnish with coriander leaves. Enjoy as a soup or with rice. Choice is yours.
