Oats based kheer / pudding being my favourite, I keep experimenting. It is not only healthy but is a real comfort dessert for me. I like to indulge in it after every meal, especially after lunch. So here is a healthy and yummy kheer made of oats and beetroot puree.
It is not only appealing but also appetizing too. This thick and creamy dessert is a real visual treat. The addition of cardamom powder and rose water gives it a mild flavour. Garnish with some chopped nuts and serve chilled for that ultimate sweet experience.
- 1 cup oats
- 500 ml. milk
- 1 tbsp. ghee
- 4 tbsp. sugar or to taste
- 4 tbsp. beetroot puree
- 1/4 tsp. cardamom powder
- 1 tsp. rose water
- 2 tbsp. each of chopped cashew nuts, pistachios & raisins
Bring the milk to a boil. Add the sugar and cardamom powder. Simmer till it is dissolved. Keep aside.
Heat ghee and sauté the oats for minute. Add the milk, beetroot puree and the dry fruits (save some to garnish).
Simmer on a low flame by stirring continuously till it thickens. Switch off the flame and add the rose water. Refrigerate for an hour.
Pour into individual bowls / cups and serve, chilled, garnished with the remaining chopped nuts. Relish them as it is or as a side dish with poori / parathas for brekkie.
