Shrikhand is a traditional Maharashtrian sweet prepared with hung yoghurt. It is a very easy, simple and at the same time a delicious dessert. It can be a healthy combination if you go in for low fat yoghurt and brown sugar. Besides the plain version, you can make many flavoured Shrikhand with your favourite fruit.
But today I tried with some gulkand for a rose flavour. Enjoy it as an after meal dessert or with poori. So go ahead and try it by checking out the step by step pictorial recipe to prepare it.
- 400 gms. yoghurt
- 2 tbsp. gulkand
- 1-2 tbsp. sugar or to taste
- 1/4 tsp. cardamom powder
- 1 tsp. rose water
- few chopped mixed nuts to garnish
- few rose petals to garnish
- pinch of saffron strands to garnish
Pour the yoghurt in a cheese cloth and place it on a strainer. Keep this on a bowl in the refrigerator overnight. The thick hung yoghurt is used for the recipe.
Blend the gulkand and the rose water. In a bowl, whisk together the yoghurt, gulkand, cardamom powder and sugar to a smooth paste.
Pass it through a sieve to remove the granules. Garnish with chopped nuts, rose petals and saffron. Chill before serving it in individual bowls.
