Scrambled Eggs with Bell Peppers


        An universal favourite and a great comfort food, this dish is very easy and simple to make. It is very common in every household. The best thing to do when you are hungry is to just crack some eggs and scramble it with a dash of salt and pepper and voila you have an appetizing meal in front of you. It can be had as it is or with some bread. 

          This is my version where I added some assorted bell peppers along with other ingredients to make it more colourful and appealing. I guess you can let your imaginations run wild and add anything you fancy. The end product is simply delicious. I love having it with parathas too. So check out the step by step pictorial guide to prepare it.





  • 4 eggs, whisked
  • 2 tbsp. oil
  • 1/2 tsp. mustard seeds
  • 1 onion, chopped
  • 1 tsp. ginger, chopped
  • 1 tsp. garlic, chopped
  • 1 red chili pepper / fresh green chilli, sliced
  • 1-2 sprig curry leaves
  • 1/2 cup assorted bell peppers, sliced
  • salt to taste
  • 1/4 tsp. turmeric powder
  • 1/2 tsp. pepper powder or to taste
  • coriander leaves to garnish







          Heat oil in a non-stick pan and temper with mustard seeds. After it stops spluttering, add the  onion, ginger, garlic, curry leaves and chili pepper / green chilies till light brown.

          Add the bell peppers and turmeric powder. Saute for a minute and then add the beaten egg, salt and pepper powder.

          Continue to fry for 2-3 minutes on low flame till it is slightly browned. Serve, garnished with coriander leaves.



                 
                                Temper oil with mustard seeds.



                                Add onion, ginger, garlic, chili pepper & curry leaves.



                               Add bell peppers & turmeric powder & saute.



                                Add beaten egg, salt & pepper powder. Fry till done.



                                Serve with bread, garnished with coriander leaves.
