Spinach Stir Fry


   
          This is a very simple and a quick spinach stir fry if you want to add some greens to your platter. Cooked with very few ingredients, this iron & calcium rich greens can be had either with chapattis or rice.





  • 2 bunches spinach, cleaned and chopped
  • 1 onion, chopped
  • 1 tsp. garlic, chopped
  • 1 green chilies, chopped
  • 2 tbsp. oil
  • 1 tsp. kalonji (nigella seeds)
  • 1 dry red chilli
  • salt to taste
  • 1/2 tsp. turmeric powder





          Heat oil in a non-stick pan and temper with dry red chilly and kalonji. After a few seconds, add the onion, green chilly and garlic and saute till it is translucent.

          Now add the spinach, salt and turmeric powder and fry on low flame till dry. Serve, garnished with green / red chilies along with rice or chapati.
