This is a simple stir fry of beans and potatoes that is a perfect accompaniment to rice or chapattis. The taste is awesome and is an everyday dish that can be done in a jiffy. It is a dry recipe. - 400 gms. beans, chopped finely
- 1 potato, chopped into small pieces
- salt to taste
- 1/2 tsp. turmeric powder
- 2 tbsp. oil
- 1/2 tsp. cumin seeds
- pinch of asafoetida
- 1-2 green chilies, chopped
- 1 onion, chopped
- 2-3 garlic cloves, chopped
- 1" ginger, chopped
- 1 tsp. coriander powder
- 1 tsp. cumin powder
- 1 tsp. red chili powder
- 1 tsp. garam masala powder
- 1 tbsp. coriander leaves, chopped
Heat oil and temper with cumin seeds and asafoetida. Then add the onion, garlic, ginger and green chilies. Sauté till light brown.
Add the chopped beans, potato, salt, turmeric powder, coriander powder and cumin powder. Cover and cook on a low flame. Sprinkle water at intervals if it sticks to the bottom of the pan.
When done, add the garam masala powder and coriander leaves. Give it a toss and switch off the flame. Serve as a side dish with rice or chapattis.
Heat oil & temper with cumin seeds & asafoetida. Then add onion,
garlic, ginger & green chilies. Sauté till light brown.
