Coconut & Coriander Stem Chutney

 

         Coriander stems / roots are extremely flavorful and has an intense aroma. They are usually discarded, but one can make best use of them.  As coriander leaves is my favorite herb, I added a handful of coriander stems to some coconut and prepared this extremely yummy chutney. You can spice it up accordingly. 

          The tempering to the end product gives a nice flavor and aroma to the chutney. This refreshing and yummy chutney can be enjoyed with idli, dosa, uttapam, vada or upma. You may also serve as a spread on sandwiches or parathas for a quick snack on the go. 





          Chutneys gives a complete meaning to any snacks / appetizers without which it is incomplete and makes any snack bland. So here is a simple and an easy chutney that can be used as a dip to be had with some veggie crudités. It can also be used as a pizza spread or added to chaats and chips. So check out the step by step pictorial recipe to prepare it.





  • 1 cup fresh grated coconut
  • 1 cup fresh coriander stem, roughly chopped
  • 1-2 green chilies
  • 1-2 garlic cloves
  • 1/3 cup roasted chana dal powder
  • 1/2 tsp. salt or to taste 

Tempering - 

  • 1 tbsp. oil
  • 1/2 tsp. mustard seeds 
  • 1/4 tsp. asafoetida 
  • 1 sprig curry leaves 
  • 1 tsp. urad dal




          Grind the coconut with rest of the ingredients into a smooth paste by adding required quantity of water. Transfer to a serving bowl.

          Heat oil in a pan and temper with mustard seeds, asafoetida, urad dal and curry leaves. 

          Sauté for a few seconds till the dal changes color. Switch off the flame and pour this tempering on the ground chutney. 

          Mix it well and enjoy as a side dish with dosa, idli, uttapam or upma. 




                 In a mixer jar take the coconut,



                            Coriander stems,



                         garlic, green chilies, 



                      roasted chana dal powder and salt.




                     Add 1/4 cup water and grind into a fine paste. 



Heat oil in a pan & temper with mustard seeds, asafoetida, urad dal & curry leaves.   Sauté for a few seconds till the dal changes color.



Pour this tempering on the ground chutney & give it a mix. 


                  Enjoy as a side dish with dosa, idli, uttapam or upma.

Coconut & Raw Mango Chutney

 

          Chutneys are an integral part of a South Indian breakfast meal. As mango is in season, I added few mango pieces to the coconut chutney for a bit of a tang. You can also make it spicy accordingly. The tempering to the end product gives a nice flavour and aroma to the chutney. This refreshing and yummy chutney can be enjoyed with idli, dosa, uttapam, vada or upma. 





          This chutney also goes by the name of Kobbari Mamidikaya Pachadi in Andhra. However, red chilies are generally used in it to give a rich red colour to the chutney. 

          It is very commonly made in all Andhra homes and is sometimes had with steamed rice with a dollop of ghee and papad. It tastes simply divine and so satisfying.

          Actually Chutneys are very versatile. You can have it as a spread on sandwiches or parathas for a quick meal on the go. 

          So go ahead make a bowlful of this delectable spicy and tangy chutney and store in an air tight container in the refrigerator for 3-4 days. It is quite handy at times.

Pachi Mamidikaya Pachadi (Raw Mango Chutney - Andhra style)

 

          Mango season is incomplete without preparing chutneys and pickles. So go ahead and try this classic Andhra style lip smacking Raw Mango Chutney called as Pachadi. You can store it in an airtight container in the refrigerator for a couple of days. In that case, increase the quantity of oil for preserving it in the form of a pickle. Enjoy it with hot steamed rice and ghee. You can also relish it with dosa, idli, uttapam, appam, pongal or chapattis. So check out the step by step pictorial recipe to prepare it.

   


         This mango pachadi is very commonly found in every Andhra household and is enjoyed by the family. There are many ways of preparing this yummy and easy side dish. In this recipe, I sautéed the mango in oil first with other ingredients, ground to a smooth paste and then poured a tempering over the finished product. 

          Be a bit more adventurous and try this amazing homemade chutney as a spread on sandwiches, pizzas and burgers for an Indian touch. It will turn into a finger licking and delectable meal. 




  • 1 medium size firm raw mango, chopped into small pieces
  • 1 tbsp. oil
  • 1/2 tsp. cumin seeds
  • 1 tbsp. coriander seeds
  • 1 tsp. urad dal
  • 1 tbsp. chana dal
  • 2 tbsp. peanuts
  • 5-6 garlic cloves, chopped
  • 8-10 dry red chilies
  • 2 tbsp. fresh grated coconut
  • salt to taste
  • 1/4 tsp. turmeric powder


Tempering - 

  • 1 tbsp. oil
  • 1/2 tsp. mustard seeds
  • 2 dry red chilies
  • 1/4 tsp. asafoetida
  • 1 tsp. urad dal (split black gram)
  • 1 sprig curry leaves








           Dry roast the grated coconut till light brown and keep aside. Heat 1 tbsp. oil in a pan and sauté the cumin seeds, coriander seeds, urad dal, peanuts, chana dal, garlic and dry red chilies till it turns slightly brown in color.

          Add the chopped mango, salt and turmeric powder. Stir fry for 2-3 minutes on a medium flame. 

          Switch off the flame and add the dry roasted coconut. Leave aside to cool. Then grind with very little water into a smooth paste.

          Tempering - Heat 1 tbsp. oil in a pan and temper with the mustard seeds and dry red chilies. After it stops spluttering, add the asafoetida, urad dal and curry leaves. Fry for a few seconds till the dal changes color and switch off the flame.


          Pour this tempering over the ground chutney. Mix well and serve as a side dish with dosa, idli, uttapam, appam, khichdi, rice-ghee combo, paratha or chapatti.

                      dal, peanuts, chana dal, garlic & dry red chilies till light brown.



                    Add the chopped mango, salt & turmeric powder. Stir fry for 2-3 minutes.



  Add the dry roasted coconut. Leave aside to cool. 



Then grind with very little water into a smooth paste.



                             Heat 1 tbsp. & temper with the mustard seeds and dry red chilies. 



                    After it stops spluttering, add asafoetida, urad dal & curry leaves. Fry for
                    a few seconds till the dal changes colour and switch off the flame.

                                 Pour this tempering over the ground chutney and mix well.



                   Serve with dosa, idli, uttapam, appam, khichdi, rice-ghee combo, paratha or
                   chapatti.

Pan Fried Salmon with Goan Recheado Masala

 

          Check out this delectable Salmon Fish Fry marinated in a classic Goan Recheado spice paste, that is both fiery and tangy. This red chili paste is full of flavors and is a must have in your refrigerator as it is quite handy. It turned out super yummy and ideal for a weekend light dinner along with some salad. You can also enjoy as an appetizer with any chutney / dip/ hummus or as a side dish with plain biryani / pulao / jeera rice. 




          Earlier I had tried with King Fish and it came out absolutely yummy. So tried with salmon this time. It was my first experience of pan frying salmon using Indian spices and was a bit skeptical as to how it would turn out. However, the end result turned out just the way I wanted. Superb!!!

         I skipped the mandatory salt, pepper, garlic and butter seasoning and wanted to try out in an Indian style. So the Goan Recheado spice paste came to my rescue as it is both spicy and tangy and suits my palate. 




  • 2 Salmon fish fillet, washed & drained
  • Recheado masala (recipe given below)
  • 2 tbsp. oil
  • 2 tbsp. butter







          Marinate the fish fillet with the spice paste for 2-3 hours.

          Heat oil and butter in a pan and shallow fry the marinated fish on both sides till done. 

          Serve as it is or with salad for a nice comfort meal.




Recheado Masala - 

  • 5-6 Kashmiri red chilies, broken into small pieces
  • 1 small onion, roasted on an open flame
  • 5-6 garlic cloves
  • 1/2" ginger
  • 1/4 tsp. whole peppercorns
  • 1/2 tsp. cumin seeds
  • 4-5 cloves
  • 1" cinnamon stick
  • salt to taste
  • 1 tsp. sugar
  • 1/2 tsp. tamarind paste
  • 1/3 cup vinegar or as required



          Soak all the mentioned ingredients in vinegar for an hour. Then grind in a mixer grinder into a smooth paste. (Do not add any water).

Goan Recheado Fish Fry

 

          Recheado Fish fry is a classic Goan dish where Pomfret, Mackerel, King fish or any seafood is marinated or stuffed with a masala paste and then shallow fried. This particular spice is called Recheado that is both fiery and tangy. It is basically a red chili paste that is full of flavors. 

          You can also coat the fish with semolina and fry to get a crisp exterior. Enjoy as it is, with any chutney of your choice, with salad or with plain biryani / pulao / jeera rice. So check out a step by step pictorial recipe to prepare it.




          The word Recheado is a Portuguese word meaning stuffed, as it is typically used as a stuffing or to marinate fish. 

          However, this paste is very versatile as it can also be used to marinate chicken, mutton, prawns or mushrooms / paneer for a veg. version. It turns out very yummy. 

          Hence, this spice paste is a must have in your refrigerator as it is quite handy when you need to dish out something quick. 





            The two main ingredients that make up the Recheado paste are kashmiri red chilies and vinegar. Water is not used in this recipe and the grinding is done by adding vinegar accordingly. If you wish to tone down the spiciness, them deseed the chilies before grinding. 

            Typically, Goan vinegar and Feni are used to make the paste, but I had to skip them as they were unavailable. The onion is generally roasted on an open flame. However, fried or sautéed onion, too, can be substituted.

  • 1/2 tsp. whole peppercorns
  • 1/2 tsp. cumin seeds
  • 6-7 cloves
  • 1" cinnamon stick
  • salt to taste
  • 1 tsp. sugar
  • 1/2 tsp. tamarind paste
  • 1/2 cup vinegar







          Soak all the mentioned ingredients in vinegar for an hour. Then grind in a mixer grinder into a smooth paste. (Do not add any water. Add vinegar accordingly). 

          If you need to store in an air tight container for a longer time, then sauté the paste in 2 tbsp. of oil for 4-5 minutes. Allow it to cool down before storing. Use as required.

          This paste can be used for marinating the fish or as a stuffing. It can also be used to marinate or cook chicken, mutton, prawns or mushrooms / paneer for a veg. version.
