French Onion Soup with Rosemary Flavor

 

            French Onion Soup, a very popular signature dish from France is a simple and a hearty soup. With few variations, I was able to create this delectable dish. I omitted the use of wine and added some rosemary instead of the mandatory thyme. Sprinkling grated cheese to the end product adds some zing to this comfort one-pot meal. You can enjoy as it is or with some croutons. or bread sticks. It can also be had in a pureed form, garnished with grated cheese. So check out the step by step pictorial recipe to prepare this comfort dish.




  • 3 large onions, sliced
  • 3-4 garlic cloves, sliced
  • 1 tbsp. butter
  • 1 tbsp. olive oil
  • 1 sprig rosemary
  • salt and pepper to taste
  • 1 & 1/2 cups water
  • 2-3 tbsp. cheese, grated
  • Few croutons





          Heat butter and olive oil in a pan and sauté the garlic till it changes color.

          Now add the onion and continue to stir fry till golden brown in color. 

          Add the water, rosemary, salt and pepper to taste. Pressure cook for 3-4 whistles and let it come to room temperature.

          Discard the rosemary sprig and ladle into individual bowls. Top it up with the croutons and grated cheese. 

          Microwave  for a few seconds or till the cheese melts and enjoy. 



                    Heat butter & olive oil in a pan.



                 Add the garlic and sauté till it changes color.


                       Now add the onion...


                     Continue to stir fry till golden brown in color. 


                    Add the water, rosemary, salt & pepper to taste. 



Pressure cook for 3-4 whistles & let it come to room temperature. Discard the rosemary sprig. 


          Ladle into individual bowls & top it up with the croutons...



                        and grated cheese. 


      Microwave  for a few seconds or till the cheese melts & enjoy.

French Onion Soup - Indian Fusion Style


          Onion Soup is a very popular and a signature French Soup. It is a simple, delicious and a hearty one-pot meal. But today I gave a twist to it and made it in an Indian fusion style, complete with our very own traditional spices like coriander powder, garam masala powder, etc. 

           Serve, garnished with fried onions, cheese, coriander leaves and bread croutons for an amazing light dinner. So check out the step by step pictorial recipe to prepare it.








  • 3 large onions, sliced
  • 3-4 garlic cloves, chopped
  • salt to taste
  • 1/4 tsp. turmeric powder
  • 1 tsp. roasted coriander-cumin powder
  • 1/2 tsp. garam masala powder
  • 1/2 tsp. pepper powder or to taste
  • 2-3 tbsp. roasted oats
  • 1 chicken / vegetable cube
  • 1 tsp. oil
  • 1 tsp. butter
  • 1-2 tbsp. fried onions
  • 1-2 tbsp. coriander leaves, chopped
  • 1-2 tbsp. grated cheese
  • few bread croutons





         Heat oil and butter in a pan and sauté the garlic first till light brown. Add the onion and continue to fry till light golden in color.

          Now add all the dry spices and mix well. Switch off the flame. Add the oats, chicken / vegetable cube and 3-4 cups water.

          Pressure cook for 3-4 whistles. When it cools down, blend it and heat through. Serve, garnished with coriander leaves, fried onion cheese and bread croutons.




                   Heat oil & butter. Sauté garlic till light brown. Add onion & fry till light
                   golden in color.



                                  Add all dry dry spices & mix well. Switch off the flame.



                                  Add oats, chicken / vegetable cube & 3-4 cups water.



                                Pressure cook for 3-4 whistles. Then blend it & heat through.



               Serve, garnished with coriander leaves, fried onion, cheese & bread croutons.

Onion Pasta Soup


          Everyone is aware of the French Onion Soup. But here I gave a twist to the original recipe by adding some coriander roots and oats to give some thickness to the soup. Some healthy whole wheat pasta also was thrown in. 

          This not only makes a wholesome meal but a satisfying one at the same time. Light on the stomach, this delicious one-pot delicacy can be relished anytime of the day with some croutons or bread sticks. So check out the step by step pictorial recipe to prepare it.





  • 3 onions, sliced
  • 1/2 cup whole wheat pasta, boiled al dente
  • 1 tbsp. olive oil
  • 1 tsp. butter
  • 2 bay leaves
  • 3-4 garlic cloves, sliced
  • 1-2 fresh chilies, chopped
  • 1 tbsp. oats
  • salt to taste
  • 1 tsp. pepper powder
  • few coriander stalks
  • 2 & 1/2 cups stock
  • coriander leaves & chili flakes and a sprig of rosemary to garnish (opt)





           Heat butter and oil in a pan. Add the bay leaves and garlic. Sauté till the garlic changes color. 

          Add the onion and chilies. Continue to fry on low flame till light brown.

          Now add the oats, salt, pepper powder and the coriander stalk. Give it a mix and switch off the flame. 

          Add the stock and pressure cook for 2-3 whistles. When done, discard the bay leaves and blend it into a puree. 

          Serve, garnished with boiled pasta, coriander leaves, chili flakes and rosemary.




                       Heat butter & oil. Add bay leaves & garlic. Sauté for a few seconds.



                                Add onion & fresh chilies. Sauté till light brown.



                             Add salt, oats, pepper powder & coriander stalks followed by..........



                          .......stock. Pressure cook for 2-3 whistles. When cool, discard bay 
                          leaves & blend it into a smooth puree. 



                                  Meanwhile boil pasta till al dente. 



                    Serve, garnished with the pasta, coriander leaves, chili flakes & rosemary.

Rosemary Flavoured Onion Soup

          
          
          Onions contain vitamin C and chromium that helps in regulating blood sugar and improves immunity. They also reduces inflammation, heals infection and maintains healthy skin. So it is beneficial to our body and needs to be taken in any form possible - whether cooked or raw. 

          So here is a hearty and a healthy clear soup made of onions and flavoured with some rosemary. It can be made wholesome by adding some oats to it. The rosemary in it gives a nice lingering aroma. For more variations, add potatoes and garnish it with cream or butter.






  • 2 onions, chopped
  • 2 cloves garlic, chopped
  • 1 tbsp. olive oil
  • 2 bay leaves
  • 1 twig rosemary
  • salt to taste
  • 1/4 tsp. pepper powder 
  • 3-4 cups chicken / vegetable stock
  • fried onion, croutons or cheese to garnish





          Heat oil and temper with the bay leaves. Add the garlic and fry till it changes colour. Then add the onion and fry till translucent.

          Pressure cook along with rosemary, salt and pepper and the stock for 2 whistles. When cool, discard the bay leaves and blend into a puree. 

          Heat through and serve, garnished with fried onion, croutons or cheese.
