This is a simple stir fry made with kulfa saag (purslane leaves) and some paneer. Kulfa is almost similar to methi (fenugreek leaves) and is slightly tangy in taste. It is a flavorful side dish that can be prepared in a jiffy. I added some pani puri masala to the end product but you can skip it if you want. Best enjoyed with either rice or chapattis. You can also substitute paneer with potatoes, matar or chole for some variation. They turn out very yummy as these healthy greens goes well with any veggies of your choice. - 200 gms. paneer cubes
- 1-2 bunches of kulfa saag (purslane leaves)
- 1-2 tbsp. oil
- 1/2 tsp. cumin seeds
- 1/4 tsp. asafoetida
- 1 onion, chopped
- 1 tsp. garlic, chopped
- 1-2 green chilies, chopped
- 1/2 tsp. turmeric powder
- 1/2 tsp. coriander powder
- 1/2 tsp. cumin powder
- 1/2 tsp. red chili powder
- salt to taste
- 1/2 tsp. pani puri masala (opt)
Heat 1 tbsp. oil in a pan and stir fry the paneer cubes till light brown. Drain and keep aside.
Heat remaining oil and temper with cumin seeds and asafoetida. Sauté for a few seconds.
Then add the onion, garlic and green chilies. Stir fry till light brown. Now add all the dry spices and give it a stir.
Add the chopped greens and cook, covered on a low flame till dry. Add the fried paneer and a sprinkle of some water. Sauté for a minute.
When done, add the pani puri masala and give it a toss. Switch off the flame and serve as a side dish with either rice or chapatti.
