Let me share today a simple whole wheat cookies that I baked with some leftover oranges. I went in for a healthier version by making use of brown sugar and olive oil too. So go ahead and bake these little bites and relish with your evening cup of tea or coffee. Kids can enjoy with their daily dose of milk. - 2 cups whole wheat flour (atta)
- pinch of salt
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. cardamom powder
- 1 tsp. orange zest
- 3/4 cup orange juice
- 1/3 cup olive oil
- 1/2 cup powdered brown sugar
In a bowl, mix together flour, salt, baking powder, baking soda, cardamom powder and the zest. In another bowl, mix together oil, orange juice and the sugar till the latter is dissolved.
Now pour the juice mix, little at a time over the flour and knead into a dough. Divide into small rounds / oblong shape and flatten them (makes around 20 cookies). You can also make some impression with your fork.
Arrange them on a greased baking sheet and bake in a preheated microwave oven at 180 degrees C for 18-20 minutes.
Cool them on a wire rack and store them in an airtight container. Sprinkle some castor sugar over it and relish them with your evening cup of tea / coffee.
