Dragon Fruit Pudding

 

                How about some sweet indulgence? So let me share a yummy pudding made of Dragon Fruit. It makes for a perfect summer treat. Be sure to have them chilled. So go ahead and give it a try by checking out the step by step pictorial recipe to prepare it. 



                 I simply love to dig into this soft and melt-in-the-mouth delicacy. Garnish as desired with some chopped Dragon fruit pieces and voila!! You have a yummy fuss-free dessert in a jiffy. Enjoy as and when desired or as an after-meal dessert.

             If you are a Dragon Fruit lover, then do try this extremely easy recipe. You will simply love it. Make in large batches to be devoured as and when you feel like. They are a perfect summer dessert. Serve them chilled with all the toppings. 



  • 1 cup Dragon fruit puree
  • 1 cup milk
  • 1/2 cup condensed milk
  • 1 tbsp. corn flour mixed with 1/2 cup water
  • pinch of saffron soaked in 1 tbsp. water
  • few Dragon fruit pieces
  • 1 tsp. chopped pistachios
  • few dry rose petals & few strands of saffron





          In a pan simmer the Dragon fruit puree on a low flame till all the moisture has evaporated.

           Add the milk, followed by the condensed milk, corn flour slurry and saffron water. Simmer on a low flame by continuously stirring till it thickens.

          Transfer to a greased cake tin / mold and keep aside to cool down. Then refrigerate for 2-3 hours.

          Invert it on a serving plate and garnish with Dragon fruit pieces, chopped pistachios, dry rose petals and saffron strands. Enjoy as an after-meal dessert or as and when desired.

Karak Tea / Chai (UAE style)

 

          Karak Tea is very popular in UAE and other Middle Eastern countries. This delectable fragrant milky tea is spiced with cardamom and saffron, the two secret ingredients that goes into making it. Evaporated milk, which is thick and creamy is also used in this recipe. 

          You can enjoy this Karak Chai along with cookies, biscuits, dates, donuts or any savory snacks as accompaniments. So check out the step by step pictorial recipe to prepare this most favored and comforting drink.





           Karak Tea is found in every street corner cafeterias and is usually served in paper cups. Any time and every time of the day you will find people enjoying it. 

          Instead of the normal evaporated milk, you can also go in for cardamom flavored evaporated milk. In that case, use less of cardamom.

          This tea is almost similar to Indian Masala Chai, minus cinnamon and cloves. So it is slightly on the milder side. It can also be made sugar free as per your preference. 





  • 2 cups water 
  • 2-3 green cardamom, crushed 
  • 2 tbsp. black tea leaves / dust 
  • 2 tbsp. sugar or to taste 
  • 1/2 cup evaporated milk 
  • pinch of saffron




          Heat water in a saucepan along with crushed cardamom and let it come to a boil. 

          Add sugar and keep stirring till it dissolves. 

          Now add the tea and bring it to a boil. 

          Add the milk and simmer on a low flame for 4-5 minutes. 

          Switch off the flame and strain in a tea pot or in individual tea cups. 

          Garnish with few strands of saffron and enjoy !!!!!1

                                  Add sugar and keep stirring till it dissolves. 



                                  Now add the tea and bring it to a boil. 









                                  Add the milk and simmer on a low flame for 4-5 minutes. 


                           Switch off the flame & strain in a tea pot or in individual tea cups. 



                                 Garnish with few strands of saffron and enjoy !!!!!1

Strawberry Pudding


          Yet another dessert option - this simple and yummy homemade strawberry pudding makes for a perfect summer treat. Made with fresh strawberries, evaporated milk and jelly crystals, they are extremely light and divine. Be sure to have them chilled. So check out the step by step pictorial recipe to prepare it.





  • 10-12 fresh strawberry, chopped
  • 1 cup evaporated milk
  • 2 tbsp. sugar or to taste
  • few drops of vanilla essence (opt)
  • 1 & 1/2 tsp. gelatin
  • 1 & 1/2 cups water
  • 2 tbsp. strawberry jelly crystals + 1 tsp. sugar
  • melted butter to grease
  • sliced strawberries & mint sprig to garnish (opt)





          In a small bowl, mix together 3/4 cup hot water, sugar and the jelly crystals till it dissolves.  

         Transfer to a greased mould and freeze for just 15-20 minutes as I want it to blend slightly with the strawberry pudding .

         Meanwhile, blend the chopped strawberries into a puree. Then add in sugar and blend again. Transfer into a bowl and add the milk and vanilla essence. 

         Mix everything well and keep aside. Mix the gelatin in the remaining water and heat it on a medium flame till it dissolves. Keep aside to cool down.

         Mix the gelatin to the strawberry mix and pour this over the jelly that was sitting in the freezer. Chill for 4-5 hours or till it is set.

          While serving, run a knife along the edges of the mould and gently flip it over a serving dish. Garnish with sliced strawberry and a sprig of mint and serve.




                  Mix together 3/4 cup hot water, sugar & jelly crystals till it dissolves.  



                    Transfer to a greased mould & freeze for 15-20 minutes as I want it 
                    to blend slightly with the strawberry pudding .



                                 Meanwhile, blend chopped strawberries into a puree. 



                                 Then add in sugar & blend again. 



                                 Transfer into a bowl.



                                  Add milk & vanilla essence. Mix well



                      Mix gelatin in the remaining water & heat on a medium flame till it 
                      dissolves. Keep aside to cool down.



Mix gelatin liquid to strawberry mix & pour this over the jelly
                               that was sitting in the freezer. Chill for 4-5 hours or till it is set.



While serving, run a knife along the edges of the mould & gently flip it over
                  a serving dish. Garnish with sliced strawberry & a sprig of mint and serve.
