This is a traditional Lebanese cuisine where the prawns are cooked along with rice and bell peppers to complete the picture. It is a very easy and a simple dish but with full of flavours, especially coming from the saffron. You can also add any other veggies you prefer. It is almost like a one-pot meal and can be served with any meat or barbeque dishes.
- 1 cup rice, soaked for 30 minutes
- 2-3 tbsp. olive oil
- 1 onion, chopped
- 8-10 large prawns
- 1 cup assorted bell peppers, chopped
- salt to taste
- 1/4 tsp. pepper powder or to taste
- large pinch of saffron
Now add the bell peppers and sauté for a minute. Then add the rice, salt and pepper. Continue to sauté for 1-2 minutes.
Add 1 & 1/2 cups water and saffron and pressure cook for 1-2 whistles. Fluff it up with a fork and serve with grilled meat and / or barbeque dishes.
