Here are some yummy muffins made with plums. This is a good way to use up any leftover fruits lying in your refrigerator. They are a perfect treat anytime of the day and they are also a great tea-time snack.
Enjoy them as dessert too by slightly crumbling them and drizzling some quick fix rabri (evaporated milk and sugar combo) over it. Sprinkle chopped nuts and sprinklers for an entirely new experience. So check out the step by step pictorial recipe to prepare it.
- 1 cup Atta (whole wheat flour)
- 1 cup maida (plain flour)
- 1 cup oats
- 1 cup brown sugar
- 1/4 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 tbsp. custard powder
- 6 plums, pureed
- 2 eggs. beaten
- 1/2 cup melted butter
- 1 tsp. vanilla essence
In a bowl, mix together atta, maida, oats, sugar, salt, baking soda, salt and baking powder. Now add the eggs, butter, vanilla essence and the puree. Combine everything well.
Place the muffin liners on the muffin tray and spoon the batter in it. Fill only 3/4 of the muffin liners. (In the absence of the liners, spoon the batter into greased muffin tray).
Place the tray on the lower rack of a preheated microwave oven and bake in the convection mode at 190 degrees for 18-20 minutes.
The top must be brown and do the toothpick test to ensure it is done. Cool them on a wire rack for 15-20 minutes.
Enjoy on its own, with your evening cup of tea / coffee or as a dessert with a drizzle of some fresh cream / rabri.
Chop plums & blend them into a puree.
Plum Puree.
Mix atta, maida, oats, sugar, salt, baking powder, baking soda & custard powder.
Add egg, butter, plum puree & vanilla essence. Mix everything well.
Spoon them into the muffin liners.
Bake in a preheated oven at 190 degrees for 18-20 minutes.
Remove from the oven.
Cool them on the rack.
Enjoy them on its own, with your evening cup of tea / coffee or with a
drizzle of some fresh cream / rabri.
