Dosa or Pancakes are shallow fried South Indian breakfast which has become popular everywhere. It is a very healthy and nutritious meal prepared from fermented rice-lentil mix. Make it even more nutritious by adding any veggie of your choice, most common being carrot, tomatoes, onion, beetroot, spinach, etc..
Here I bring to you Dosa with the goodness of spinach, which are blanched and pureed before mixing it with the batter. They can be served anytime of the day and is a perfect light meal for young and old. Enjoy these delicious pancakes along with coconut chutney and sambar for a light meal.
- 1/2 kg Dosa batter
- 2-3 bunches of spinach
- oil to shallow fry
- coconut chutney and sambar to serve
Clean and blanch the spinach. When it cools down, puree it and mix it with the Dosa batter.
Heat a tawa / griddle and drizzle 1 tsp. oil. Sprinkle some water. After it sizzles off, wipe clean with a paper towel or rub an onion over the surface of the tawa . This ensures a non-stick coating.
Pour a ladle of the batter and spread it in a circular motion into a round circle. Drizzle some oil around the edges and over it.
Lower the flame and cook on one side for 2 minutes or till it turns slightly brown.. Flip it over and cook the other side till light brown. Remove from the tawa and keep on a plate.
Each time a Dosa is made, rub the surface of the tawa with the cut onion. Make similar Dosas with the remaining batter. Serve them hot with coconut chutney and sambar for a delicious breakfast.
