Lemony Curried Cauliflower Soup

       
          
          Cauliflower contains a lot of vitamins, especially vitamin C, proteins, minerals and fibre It is good for the heart, improves digestion and also aids in weight loss. So this delicious and a wholesome cauliflower soup is ideal for the elderly. 

          I added some potatoes to give some texture and consistency to the soup. It can be substituted by masoor dal (red lentils) or oats. A dash of lime will enhance the taste and flavour. It can be relished as a light dinner with few bread sticks or bread croutons.





  • 2 cups cauliflower florets
  • 1 small potato, cubed
  • few coriander leaves
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • salt to taste
  • 1/2 tsp. pepper powder or to taste
  • 1/2 tsp. turmeric powder
  • 1/2 tsp. garam masala powder
  • 1 tsp. coriander-cumin powder
  • 2 tbsp. olive oil
  • few kaffir lime leaves





          Heat oil in a pan and sauté the onion and garlic till the onions turn translucent. Now add the cauliflower and potatoes and sauté for 2-3 minutes on low flame till they turn slightly light brown in colour.

          Add the salt, turmeric powder, pepper powder, coriander-cumin powder and garam masala powder and fry for a minute. 

          Add 3 cups water, kaffir lime leaves and coriander leaves. Pressure cook for 3 whistles. 

          When done, discard the kaffir lime leaves. Blend to a puree. Heat through and serve with some bread sticks.
