Egg Fried Rice


          Have some leftover cooked rice and want to prepare something out of it? Then do try this simple and easy Egg Fried Rice and enjoy as it is or with some side dish and papad. They can also be packed as a lunch box meal too. 

          So go ahead and prepare this delicious one-pot wonder for a satisfied comfort food. This is a very quick recipe and few roasted cashews / peanuts can also be added to it for some slight crunch. 





  • 2 cups cooked rice
  • 2 eggs
  • 2 tbsp. oil
  • 1 tsp. cumin seeds
  • 1 onion, chopped
  • 1 tsp. garlic, chopped
  • 1 tsp. ginger, chopped
  • 1-2 fresh red / green chilies, chopped
  • salt to taste
  • 1/2 tsp. turmeric powder
  • 1 tsp. red chili flakes (opt)
  • coriander leaves to garnish





          Heat oil in a pan and temper with cumin seeds. Sauté for a few seconds. Now add the onion, ginger, garlic and fresh red / green chilies. Sauté till light brown. 

          Add the eggs, turmeric powder and red chili flakes. Fry for 1-2 minutes till the eggs are well fried. Then add the rice and salt. 

          Combine everything well and sauté for 2 minutes more. When done, add the coriander leaves and serve with any side dish or simply as it is.
