  • salt to taste
  • 2 fresh red / green chilies
  • handful of coriander leaves, chopped
  • 1 tbsp. roasted gram flour

Heat oil in a pan and temper with the cumin seeds and ginger. Saute for a few seconds. Add the turmeric powder and garam masala powder.

Then add the grated papaya, salt and fresh chilies. Mix everything well and cook, covered on a medium flame. Keep stirring at intervals and cook till all the moisture is dry.

Transfer to a bowl and set aside to cool down. Add the coriander leaves and gram flour. Mix well and keep aside.

In a bowl, mix together flour, salt and 1 tbsp. oil. Add required quantity of water and knead a stiff dough. Cover with a damp cloth and keep aside for 15-20 minutes.

Divide the dough into 4 equal portions. Take each ball of dough and roll out like a poori by dusting some flour. Place 1-2 tbsp. of the filling and bring all the edges together.

Secure it firmly and flatten it with your fingers so that the stuffing is evenly spread out. Now dust some more flour and roll out into a bigger circle, just like a chapatti.

Make similar parathas. Heat a tawa / skillet and shallow fry the stuffed parathas one at a time, by drizzling some oil over it and around the edges.
