Oats & Custard Kheer (Payasam / Pudding)

This is an absolutely yummy and a simple kheer made of oats and custard powder. Any flavour will do and this combination results in a thick and creamy dessert. This healthy kheer (payasam / pudding) can be had as it is or as an after meal dessert.

You can have them guilt free as it is not laden with ghee and I have used brown sugar. The addition of rose water and cardamom gives it a mild flavour. Garnish with chopped nuts and serve them chilled in individual bowls. So check out the step by step pictorial recipe to prepare it.

  • 750 ml full cream milk
  • 3 heaped tbsp. custard powder (any flavour)
  • 2 tbsp. oats
  • 5-6 tbsp. powdered brown sugar or to taste
  • 1/4 tsp. cardamom powder
  • 1 tbsp. rose water
  • 1 tbsp. chopped nuts to garnish

Lightly roast the oats for a few seconds and keep aside. In a bowl, mix together custard powder and 1/2 cup milk to a smooth paste. Keep aside.

Bring the milk to a boil. Add the sugar, cardamom powder and oats and simmer for 4-5 minutes on a low flame by constantly stirring.

Add the custard mix and mix well. Keep stirring till it turns thick. Switch off the flame and add the rose water.

Mix and keep aside to cool for a while. Chill and serve in individual bowls, garnished with chopped nuts.

Dry roast oats for a few seconds & keep aside.

Mix custard powder & 1/2 cup milk till smooth. Keep aside.

Bring the milk to a boil.

Add oats, sugar & cardamom powder.

Mix well & simmer on low flame, stirring continuously for 4-5 minutes.

Add custard mix & continue to stir till it turns thick.

Garnish & serve them chilled in individual bowls.
