Suran (Yam) Masala Stir Fry


                    This is a simple and a quick side dish to be had with roti or naan. Yam, a very nutritious veggie, which contains a lot of vitamins, is not much preferred by many. However, if it is prepared in this spicy manner, can turn out simply awesome. I added some coriander roots along with other basic ingredients for some intense flavour. 






  • 500 gms Suran/ yam
  • 1 onion, chopped
  • 2-3 garlic, chopped
  • 1" ginger, chopped
  • 2-3 green chilies, chopped
  • 1/4 cup coriander stem, chopped
  • 2 tbsp. oil
  • 1 tsp. cumin seeds
  • 1/4 tsp. asafoetida (hing)
  • salt to taste
  • 1/2 tsp. turmeric powder
  • 1 tsp. coriander-cumin powder
  • 1 tsp. red chili powder
  • 1 tsp. garam masala powder
  • 1 tbsp. lime juice
  • coriander leaves to garnish






          Pressure cook the suran for one whistle. Chop them into cubes and keep aside. Heat oil in a pan and temper with cumin seeds and asafoetida.

          Add the onion, ginger, garlic, coriander stem and green chilies and saute till light brown. Add the boiled suran cubes and all the powdered masalas and saute on low flame for 2-3 minutes.

          Add lime juice and mix well. Serve, garnished with coriander leaves.
