Suran Bharta (Mashed Elephant Yam Curry - North Indian Style)

     

          This is another great way of cooking Suran, termed as a common man's vegetable. It is prepared just like Baingan Bharta, which is a North Indian delicacy and it can be relished with any Indian bread. As Suran contains a lot of nutrients, there are many uses to it. Boiled suran can be used in salads or made into koftas and relish them with some green chutney.
       




  • 500 gms. suran (Elephant Yam), boiled and mashed
  • 1 large onion, chopped
  • 2 green chillies
  • 1 " ginger, grated
  • 2-3 garlic cloves, chopped
  • 1 tomato, chopped
  • salt to taste
  • 1/2 tsp. turmeric powder
  • 1/2 tsp. red chili powder
  • 2 tbsp. oil
  • 1/2 tsp. cumin seeds
  • pinch of asafoetida (hing)
  • coriander leaves to garnish






          Heat oil and temper with cumin seeds and asafoetida. Then saute the onion, ginger, garlic and green chilies till light brown. Add the chopped tomatoes and fry till well mashed up.

          Now add the mashed suran, salt, turmeric powder and red chili powder. Continue to fry for 2 minutes on low flame. Serve, garnished with coriander leaves. Can be had with rice or chapatti.
