Spicy Chicken Stir Fry (Andhra Style)

         
           
          A spicy treat for your taste buds, it is definitely not for the faint hearted. But it tastes really yummy. Have it rolled up in a paratha, a la frankie style. Good for breakfast or as a light lunch on the go. Can be had as a side dish with chapatti / naan or as a party appetizer. To save time, boil the chicken and keep it ready, then you can dish out this recipe in no time. 





  • 250 gms. boneless chicken, boiled and shredded
  • 2 onion, chopped
  • 5-6 garlic cloves, chopped
  • 2 green chilies, chopped
  • few curry leaves
  • 2-3 tbsp. oil
  • 1/2 tsp. mustard seeds
  • salt to taste
  • 1/2 tsp. turmeric powder
  • 1 tbsp.  Sambar powder
  • 1 tbsp. kura karam podi / red chili powder or to taste
  • 1 tbsp. lemon juice or to taste
  • coriander leaves to garnish






          Heat oil in a pan and temper with mustard seeds. After it stops spluttering, add the garlic and sauté till it changes colour.  Add the onion, green chilies and curry leaves and fry till light brown.

          Then add the shredded chicken, salt, turmeric powder, sambar powder and kura karam podi / red chili powder. Continue to fry on low flame till well combined. Sprinkle water at intervals.

          The curry should be dry. Finish off with lemon juice. Serve, garnished with coriander leaves
