Rava Dhokla (Steamed Semolina Cake)

         
          This is another of the classic Gujarati snack. This instant version of rava dhokla is a yummy evening snack that goes very well with your evening cup of tea. Healthy and nutritious, it can also be a great lunch box meal. Sumptuous and filling, these steamed spongy dhoklas can add wonders to any party menu. 






  • 1 cup rava (semolina)
  • 1/2 cup yoghurt
  • 2 tsp. lime juice
  • 1 tsp. ginger-green chilies paste
  • salt to taste
  • pinch of turmeric powder
  • 1 tsp. sugar
  • 1 tsp. Eno fruit salt
  • 2 tbsp. oil
  • 1/2 tsp. mustard seeds
  • 1 tsp. sesame seeds (til)
  • pinch of asafoetida (hing)
  • 2 green chilies, chopped
  • few curry leaves
  • 1 tbsp. fresh coconut, grated
  • 1 tsp. coriander leaves, chopped






          Mix together rava, yoghurt, salt, turmeric powder, lime juice, sugar and ginger-chili paste with enough water into a thick batter of pouring consistency. Leave it to ferment for an hour.

          Add the Eno fruit salt and give it a gentle mix to combine well. Pour into a greased steel plate and steam for 12-15 minutes. After it cools down, cut it into desired shapes.

          Heat oil in a pan and temper with mustard seeds. After it stops spluttering, add the sesame seeds, asafoetida, green chilies and curry leaves. Saute for a few seconds.

          Then sprinkle little water and pour this mix on the steamed dhokas. Serve, garnished with grated coconut and coriander leaves.
