Aloo Ki Sabzi (Potato Curry)

                 
          A simple spicy and yummy aloo ki subzi (potato curry) to go with the urad dal kachoris. As it is well known, there are many variations to this most favourite curry. You can relish with rice, paratha, chapatis or poori. 





  • 2-3 potatoes, boiled and cubed
  • 2 tsp. oil
  • 1 tsp. cumin seeds
  • 1/4 tsp. asafoetida (hing)
  • 1 tsp. ginger, grated
  • 1-2 green chilies, chopped
  • salt to taste
  • 1/2 tsp. turmeric powder
  • 1 tsp. coriander-cumin powder
  • 1 tsp. garam masala powder
  • 1/2 tsp. amchur powder
  • 1 tsp. red chili powder
  • coriander leaves to garnish






          Heat oil in a pan and temper with cumin seeds and asafoetida. After a few seconds, add the ginger and green chilies and sauté for a minute on low flame.

          Now add the potatoes and fry for 2-3 minutes. Add all the dry spices and continue to stir fry for a minute till the potatoes are well coated.

          Add 1 & 1/2 cups water and simmer for 2 minutes till the gravy thickens slightly. Garnish with coriander leaves and serve hot with urad dal kachoris, rice, paratha, poori or chapatti.
