A simple and a yummy mashed potato curry which Bengalis usually have with plain steamed rice or as a side dish with rice-dal combination. But there is absolutely no harm in having it with parathas. When time is short, this is the best and the easiest comfort food one can have. It can also be served as a spread on chapattis and rolled like a frankie for a snack or as a lunch box meal.
- 2 potatoes, boiled & mashed
- 1 large onion, chopped
- 1 tsp. kalonji (nigella seeds)
- 2 tbsp. mustard oil
- 1-2 dry red chilies
- pinch of turmeric powder
- salt to taste
- chopped coriander leaves, fresh chopped chilies & fried onions to garnish (opt)
Heat oil in a pan and temper with the red chilies and kalonji. After it stops sizzling, add the onions and turmeric powder and saute till golden brown in colour.
Switch of the flame. Add the mashed potato and salt and combine well. Serve, garnished with coriander leaves, fresh chilies and fried onions. It can be had with hot steamed rice or as a side dish with dal-chawal (rice & lentils).
