This is a very healthy and nutritious soup, loaded with proteins and fibre. It is also low in fat, thus a no-guilt soup, which can be consumed by anyone. The mint in it gives a very refreshing flavour and taste to it. To add more body to it, a tbsp. or so of oats can be added. Have it with some croutons or bread sticks.This simple soup can be a great start to any meal.
- 1 1/2 cups frozen green peas, thawed
- 1 onion, chopped
- 2-3 garlic cloves
- 1 tbsp. oats
- 2 bay leaves
- 1" cinnamon stick
- salt to taste
- pepper to taste
- 2 1/2 cups vegetable / chicken stock / plain water
- 1 tsp. oil
- 1 tsp. cream
- 1/2 cup mint leaves
Heat oil and temper with the bay leaves and cinnamon. Then add the onion and garlic and saute till translucent. Add the peas, salt and pepper and fry for few seconds.
Add the stock, oats and the mint leaves and pressure cook for 2 whistles. Adjust the stock depending on the consistency required. Cool and discard the bay leaves and cinnamon. Blend into a puree. Heat through and serve, garnished with mint leaves and cream.
