Khamun Dhokla (Steamed Chickpea Cake)

          Khaman Dhokla is a traditional Gujerati snack and is similar to Rava Dhokla. The only difference is that here sooji (semolina) is replaced by besan (chickpea flour). It is a very filling, sumptuous and a nutritious snack for every one. Best had with green chutney.

  • 1 cup besan (chickpea flour)
  • 1 tbsp. sooji (semolina)
  • 1/2 cup yoghurt
  • salt to taste
  • pinch of turmeric powder
  • 1 tsp. ginger-green chilies paste
  • 1 tbsp. lime juice
  • 1 tsp. sugar
  • 1 tsp. eno fruit salt
  • 2 tbsp. oil
  • 1 tsp. sesame seeds
  • 1/2 tsp. mustard seeds
  • 1/4 tsp. asafoetida (hing)
  • 2 green chilies, chopped
  • few curry leaves
  • 1 tbsp. fresh coconut, grated
  • 1 tsp. coriander leaves, chopped

          Take a bowl and mix together the besan, sooji, yoghurt, salt, ginger-green chilies paste, lime juice, sugar and turmeric powder with enough water to form into a batter of pouring consistency. Keep aside for 30 minutes.

          Add eno fruit salt to it along with 1 tbsp. water and gently fold it in. Pour into a greased steel container or plate and steam for 12-15 minutes. When cool, cut into desired shapes.

         Heat oil in a pan and temper with mustard seeds, sesame seeds, asafoetida, curry leaves and green chilies.

         After it stops spluttering, add little water and pour this mix on the steamed Dhoklas. Serve, garnished with coconut and coriander leaves.
