Coconut Rice - South Indian Style

          
          This dish is a popular delicacy in South India, especially Tamilnadu. Any left over cooked rice can be consumed by just adding some fried coconut, peanuts / cashewnuts, curry leaves and other condiments to it. Very simple and easy to make, it is a comfort food for anyone who loves coconut. 






  • 2 cups cooked rice
  • 1/2 cup fresh coconut, grated
  • 2-3 tbsp. oil
  • 1 tsp. mustard seeds
  • 2 dry red chilies, broken
  • 1 sprig curry leaves
  • 1 tsp. urad dal
  • 1 tbsp. chana dal
  • 2 tbsp. roasted peanuts / cashewnuts
  • salt to taste
  • coriander leaves to garnish (opt)


          Heat oil in a pan and temper with mustard seeds and red chilies. After it stops spluttering, add the urad dal, chana dal and curry leaves. Saute till the dals changes colour.

          Now add the coconut and fry till light brown in colour. Then add the cooked rice, salt and the roasted peanuts / cashewnuts. Fry on low flame for 2-3 minutes. Serve, garnished with coriander leaves.
