A simple every day dish of potatoes cooked with bottle gourd. For added flavour, bori / mangodi / vadials can be added. It is a dry dish to be had with chapattis or as a side dish with rice and dal. For the non-veg. version, add some fried prawns to it.
- 1 potato, cubed
- 1 small Lau (bottle gourd), cubed
- 1 onion, chopped
- 1 tbsp. ginger-garlic paste
- 1 tomato, chopped
- 2 green chilies, slit
- 2-3 tbsp. oil
- 1/2 tsp. cumin seeds
- 1/2 tsp. turmeric powder
- salt to taste
- 1/2 tsp. red chili powder
- 1 tsp. coriander-cumin powder
- 1 tsp. garam masala powder
- 1 tsp. ghee (clarified butter)
- coriander leaves to garnish
Make a paste of turmeric powder, red chili powder, coriander-cumin powder and garam masala powder with some water and keep aside.
Grind the onion, ginger-garlic and tomato to a paste and keep aside. Heat 1 tbsp. oil in a pan and fry the potatoes till light brown. Keep aside.
Heat the remaining oil and temper with cumin seeds. Then add the onion paste and saute till oil separates. Now add the masala paste and saute well for a minute. Add the bottle gourd, fried potatoes, green chilies and salt and fry for 2-3 minutes on low flame.
Add 1/2 - 1 cup water. Cover and cook till the veggies turn soft. When done, add the ghee and mix well. Serve, garnished with coriander leaves.
